Is there any way to know the amphiteater show scheduling before leaving home? e.g. something like the Steve Soares site of WDW.

Schedules change according to the day of the week, so I'd suggest calling just a few days before you leave.
Anyway, working the amphitheater shows into your touring schedule is pretty easy.
