Amanda's Menu Planning Spectacular!

Hi Everyone! And thank you again for your continued support. Beth, I've actually been looking for a job for awhile. I'm one of those types who is always looking and interviewing. I just haven't found anything else. The mortgage/banking business is at a bit of a stand still at the moment due to the market and interest rates.

Last night was a BLAST! I had so much fun at the rehersal and dinner. I was a little nervous in my dress but everyone assured me that I looked good. My dinner was a lightly breaded chicken breast, salad, and veggies. I did have the scoop of Spilloni (?) Ice Cream that they gave us though. And I also managed 3 glasses of Reisling Wine. :) I was a happy girl!

I managed to get through the entire work day without one comment from my boss. So that was nice. I actually haven't spoken to my boss all week - my negative feedback is coming via email which makes it even harder to swallow.

One bad thing did happen yesterday. On the way to the rehersal I was behind a cement truck by about 50 to 100 feet. All of a sudden it dropped all this cement onto the pavement. Well since it was a busy time of evening I could not swerve to miss the chunks and they all managed to ram right into my pretty little car. So now I have these huge scratches and dents in my bumper. I wrote down the name of the company and I am hoping to call them today and see if they will pay for the damages. But I don't have very high hopes that they will.

Menu plans for today:
B: Eggs and Cheese
L: Chef Salad
S: String Cheese
D: Pork Tenderloin, Veggies,

Today could have been better:
B: 2 eggs - 1 slice of cheese - 3 carbs
L: Chef Salad and half a regular coke
S: 2 Peanut Butter Cups
D: Chicken Quesidilla and the rest of the coke.

So not the best choices today but we are still doing okay. :)

Good Morning! I've been up since 7:30 this morning but I've been laying in bed all morning watching Mary Poppins. It has been great to just kick back and relax all morning instead of stressing out as I have been all week.

We have a wedding to attend tonight so i have no real plan except to eat low carb while I'm at home. I won't be able to post tomorrow since I'll be doing wedding prep all day.

Enjoy your relaxing day!! I just know you'll be looking beautiful tonight while at the wedding, and tomorrow when you're IN the wedding! You must be broke - buying LOTS of presents!! :p

Amanda, I'm so glad that you weren't hurt when the load of cement was dropped in your path! A long time ago, I was driving about 65mph when a load of blocks fell off the back of a truck. I swerved to miss it, lost control of the car, flipped over and slid (upside down) into a bridge abutment (sp). The passenger side of the car was demolished, but fortunately, I was alone and I was the only one hurt. I broke the bones under my nose from my face hitting the stearing wheel, had some neck injuries and a concussion, and a knee laceration from broken glass, but that was it (the seatbelt saved my life). According to witnesses, the truck that was carrying the load took the first exit off the highway and was never found or held responsible. I'm glad that you were able to get the info about your truck!

I'm also glad that you're having lots of wedding fun this weekend. Relax and enjoy!

Doe - Yes we are broke! :tongue: Between baptisms and two weddings we've spent a lot of money the last two weeks.

Erin - OH MY GOD! Your post has scared the heck out of me! I still haven't actually talked to anyone at the company about the situation - I am going to call them first thing this morning at 8 a.m.

The wedding yesterday was beautiful. It was the most perfect day! The wedding was outside and the weather was a wonderful 75 degrees - it was amazing because even in our dresses we were all comfortable. I think I cried about 5 times yesterday! :sad1: but they were happy tears for my friend. As maid of honor I got to make a speech and I cried from beginnng till end. I also made the bride cry and her mother so that was a bonus. We also had a lot of fun the entire day. It started at 7a.m. when we got up and started getting ready for our hair appointments which were at 9a.m. We had the whole shop to ourselves and we brought fruit, bagels, and Mimosas! Everything was just perfect. The best part of the evening for me is when one of the other bridesmaids - the bride's cousin - came up to me and said, "I will see you again right? Because my sister and I like you guys a lot and we have had so much fun!" It is just nice to hear something so good and positive after such a long and tiring week.

I have today off to recharge my batteries. My feet are so sore from my shoes that it still hurts to walk today. I'm thinking I might soak them in the tub for awhile. Plus the house does need to be picked up but I am not going to do any major cleaning today.

Plan:
To do the best that I can. I am going to take the day off from eveything and that includes my diet. I am going to eat what I feel like eating regardless of carbs. It is chilly here in St. Louis today. (10 degrees cooler then yesterday!) so I am thinking it is the perfect day for Tuna Casserole. :)

Tuna casserole! That's a real comfort food at my house that we haven't had in a while! The cooler weather just brings out those comfort food cravings in me! ::yes::

I'm so glad that you had a wonderful day yesterday! Being MOH can either be a blessing & joy or a trip to the Nether Regions - sounds like this time it was truly a blessing and joy!

You were wise to take today off to relax and recharge - you're one smart girl!! Enjoy some down time! :sunny:
 
What a beautiful wedding! Isn't it nice to reflect and see all the blessings in our lives? Especially after the week that you had! :crazy: Just makes you appreciate what you have (wonderful DH) and say the other stuff (work) just doesn't matter!:tongue:

I ended up spending all day yesterday in bed with a cold :faint: I woke up feeling fine although a little tired. I took a shower and went grocery shopping and by the time I got to the store I could already feel it coming on. I grabbed some cold medicine and about a gallon of Orange Juice and went back home. Just that small trip exhausted me to the point where all I did yesterday was sleep. I was so tired. I drank plenty of OJ though and managed to eat a peanut butter and jelly sandwich. I also did make the Tuna Casserole last night and did manage to eat alot of that - it was so good! I am back at work today but I still feel really queezy and light headed.

Plan for today - no plan! I'm sick and I need sick food!
B: Peanut Butter and Jelly
L: Chicken Noodle Soup
D: ??? Not sure - might be everyone fends for themselves night.

I forgot to mention that I went clothes shopping at Kohl's on Saturday. I got 2 pairs of slacks both in size 12's and they are even a little to big. And I got 2 sweaters and both are in Large sizes instead of X-large. I actually had to go back and get smaller sizes! It was a nice feeling.

I had my one on one meeting with my manager this morning. I gave them some feedback as to last few weeks. And it was a good conversation which is helping me to feel a lot better.

I am going to try and get to everyone's journal - but I apologize if I don't!

I'm really happy to hear that you met with your manager and had a good face-to-face conversation! ::yes:: Here's hoping that things will improve for you!

UGH. I'm sorry you're not feeling well. I agree with Doe--eat whatever your body's telling you it wants or needs, and drink, drink, drink! And don't be surprised if the number on the scale goes up while you're ill. During certain illnesses your body will retain water--especially when it has to help produce all that mucous-y, runny nose stuff that helps flush the viruses/bacteria out of your body (sorry--TMI!) :crazy2: Just take it easy, rest when you can, and don't give a hoot about getting on the scale. I hope you're feeling better soon! :sunny:

Good Morning Everyone! Well I must admitt that I am feeling much much better today. My head is not foggy and I actually feel very much awake! That being said my nose is still running and my throat is a little dry - but I am on the mend and that is a good thing. I actually looked in the mirror today and was surprised at how thin I look! I love these new clothes that I bought at kohls. And I received all sorts of compliments on my outfit yesterday.

My plan for today is to still rest and recover. I'm keeping food choices simple and have no stressful activities planned except for work ;)

I bet you're lookin' GREAT in your new clothes! You can take on the world, girlfriend!! Isn't it funny how a new outfit can totally change our attitude? :crazy: Hmmm, maybe I need to go shopping.......:idea:

I bet those sniffles will be gone in another day - I think sniffles were invented and spread by the guy who created Kleenex! :teeth:
