your cruise report is fantastic! didn't you just love it? from the food, shows and the rainforest - ahhhh :love: did you book again? we did the turtle farm and I thought the same, I did pick one up. I want to hear how you liked Castaway Cay :sunny:

Oh the weight struggle continues for us all - I know you can conquer it. How is South Beach? Keep strong!

How is Susan's adoption going? are you and Doreen doing another 1/2?

It's Monday again, and work calls. Let's do our best today to stay on track and get rid of these extra pounds that are weighing us down. :cool1: :cool1: We'll feel so much better!! ::yes:: I'll keep you in my prayers often today for a healthy day filled with lots of :) :) :) :).

MeMe stopped by! That brought a :) to my face this morning.
Yesterday I earned :) :) :) :) - and it was on a weekend! My food wasn't perfect, but I decided to give myself a bit of a break on the weekends as far as my goal.

I will be working a bit on my trip report today so stay tuned!

B: diet soda, scrambled eggs and 1 sausage pattie.

Welcome to Cozumel, Mexico!

Our excursion didn't start till noon so we were able to sleep in this morning. It felt so good :flower: . We got up and put on our bathing suits and lathered up on sun screen. I had room service this morning of coffee - YUMMY!

We met everyone in the Disney Theatre and headed to our excursion. We got on an awesome 60 foot catameran and headed away from the magic. They took us to a reef to snorkel in. It was great! I loved snorekling so much more then swimming with the stingrays. Fish don't want you to bother them! We got some great pictures and had a blast. Afterwards we loaded back on to the boat and headed to a private beach.

On the way they served Margaritas and Beer, we also met Shane and Wendy from Colorado. They were such a sweet couple and we had a great time talking with them. Once on the beach we all decided to try kahaking - fun but rough on the arms. This is where I met more DIS-ers, Goofy Too and her husband. Then we grabbed some more drinks (can you see where this is going?) and got in a bit of shade. Brian and I were extremely careful with sunscreen since we burn so easily. At some point My husband, Eric, Shane, and another guy decided to play beach volley ball. Oh this was hysterical :rotfl: It was like watching a bad version of "Top Gun" with b rated actors!

Eventually I joined in along with several others including our own Tera (Theresa). The game was fun and we didn't keep score (although Theresa and my team won ;) ) and then it was back to the Catameran.

Now as some of you know from reading my journal DH and I enjoy the occasional alcoholic drink ;) well my neighbors, and her Dad - don't. They have been drinking all afternoon on partially empty stomachs and it is starting to hit them. DH and I felt dead sober though :rotfl: which is why we were the camera operators.

Eric and Shane jumped up to the front of the Catameran to dance to "YMCA" by the Village People. They were dancing and making complete fools of themselves - it was a riot. Thankfully none of us had to drive home. As we are getting back on the Magic I'm giving them all instructions - go eat something with bread like a hotdog or hamburger - take some asprin, and then take a 30 minute nap before dinner.

Do they listen to the girl with experience - NOOOOOOOO!

That night was Pirate night so we skipped the show (which was actually a movie). We got something to eat, took a nap, and then took our time getting ready for dinner. At the time we booked the cruise this night was called Tropical Night - so I bought Brian and I matching Tropical outfits for the evening. We looked so cute! We got our picture taken with Pirate Chip and Dale before dinner. That night we were in Animator's Palate and the menu was really good. I had sea scallops and crab meat in a light red pasta sauce. Yummy!

We then headed up to Deck 9 for the Pirate Party which was a lot of fun. I tried to find my fellow DIS-ers but couldn't :( The Pirate Party has a lot of dancing and then the PIRATES take over the ship. They've got these guys swinging from Deck 10 down. It was really neat. Then there are fireworks - so cool! Susan and I finished a glass of wine while watching it.

After the pirate party we headed down to Rockin Bar D for Karaokee. They give you a free shot when you are done. Susan and I sang a horrible duet of "Part of your World" from the Little Mermaid. And I also sang solo "Ready to Run" by the Dixie Chicks. I wasn't the best singer but I wasn't the worse either. We stayed up till about 12:30 and then headed to bed.

Tomorrow is another day at Sea!

Loved Cozumel! will def go back there. We rented cars, a neon green conv buggy and did Senor Iquana's bar & paradise beach. Your catamaran trip sounds awesome! Isn't the Pirate Party great? next time I'll be sure to take a nap that day.

Aw, shoot, what I would've given to see you and Susan singing Ariel. :flower: It sounds like you guys had an absolute blast on this trip!

Thanks for the song in my journal, Amanda. I guess it's the second best thing to karaoke. :banana:

I am feeling good and confident today! I'm going to earn all 4 smilies! Dinner was great - fresh salad and then Heroin wings - yummy! And I just put my dessert in the freezer to thicken up. You take a sugar free pudding pop and microwave it for 15 seconds. Take it off the stick and then mix it with 2 TBsp whip cream and 2 TBsp peanut butter and OH MY GOD! It is so good! And completely within my S. Beach plan. I'm going to have to check the book out from the library to learn how to handle phase 2. I weighed myself this evening at I am down to 169.2 lbs. I'm thinking I need to do one more week on Phase 1 before jumping to Phase 2.

Yesterday was a great day! I did end up having an extra dessert but since it was still within program I did not feel I lost my :) for food.

Things are looking good again for today. I'll need to do a little more prep work then usual but that is okay. I have a long work day ahead of me but I am feeling strong.

Crab Cakes - super easy and great for low carb diets.

1 cup crushed pork rinds
1 can of white crab meat drained.
2 TBsp Mayo
1 egg
1 tsp Parmesean Cheese
1-2 tsp of seasonings (I've used Cajun and Lemon Pepper and like both)
Mix together and form into 4 small patties.

Heat about 2 Tbsp of oil (olive or canola) or you can use butter.
Add patties to oil and cook over medium high heat until both sides are brown.
I serve this with Dijon mustard - YUMMY!

No leftover crabcakes for lunch today since I ate all 4 of them yesterday!

I earnee :) :) :) :) again yesterday. It feels great! I slacked a bit on my veggie intake yesterday so I am going to try and make up for it today.

b: 3 egg omelet w/green peppers, mushrooms, and cheese
s: I haven't been needing a morning snack
l: Santa Fe Chicken Salad, 8 oz. of milk
s: Low Fat yogurt flavored with sugar free jello, string cheese
d: ??? I really don't know. I know a salad will be involved but I'm not sure of the main course yet. The kitchen is starting to get a little sparse.

Thursday, May 12th
A Day at Sea.

We took our time getting up this morning since we litterally had nothing to do.

We went to shutters and checked out our pictures - we bought so many pictures - but they all looked so good! One of my new years resolutions was to allow myself to be photographed more - I think I'm doing good!

We ate some lunch and then headed to the Deck 4 lounge chairs and took a nap. There is nothing more relaxing then listening to the ocean while you lay down. *sigh*

We got up and decided to go and see a movie. We saw, "Alot like Love" with Ashton Kutcher and Amanda Peet. It was very cute and we enjoyed it a lot. By the time the movie let out it was time to go get ready for the show.

So we went back to our room to get dressed for the evening. The show as Disney Dreams and it was very very good. A little slow in the beginning but I loved how it ended.

Dinner that night was at Parrot Cay and the food was excellent. I cannot remember what I ate at all though. I should have taken better notes!

After dinner we headed to Rockin Bar D for 70's night. This night is hysterical! My neighbor Susan got picked for the Gloria Gainer contest - she had to lip sync "I will Survive." Then her husband Eric got to be the cop in the Village People. I laughed till it hurt that evening - and the comedian was great! Another guy we met on the cruise, Cary, was in stitches laughing at him.

After all the entertainment was done, we called it a night. DH wasn't in the mood to dance (as usual) and to be honest we were pretty tired. There was only one problem - WE WERE HUNGRY! Thank goodness there was a midnight chocolate buffet going. So we loaded up on snacks, called room service for pizza, and watched a movie in the room till about 1:30.
