My family often books two ADR's per day, but not every day. We like a PPO breakfast in Epcot, it gives us an edge there. We have booked TH in DAK< however it was not that much of a jump start, so not worth it to us. BOG breakfast can be a bit of a head start, so if you wnat to see the inside of the Castle, book it. If not, maybe book lunch. It is pretty, and the food is good.
If your only reason for PPO breakfast is to give you an edge, I would drop them all.
I would move Chefs to dinner, keep both Sci Fi and 50's in DHS. You can share those meals and have plenty of food, a nice break and see them both.
In MK Skippers was my daughter's family favorite meal. I would keep it. Again you do not need to order three courses.
I don't know why people say 1 TS meal per day is too much food. We eat three times a day at home, so vacation is no different. We may not book three, but we do eat. We like having a scheduled break (when I say we, I mean me) because it is way too easy to get carried away with "one more attraction" before we eat and by the time we stop I am a mess.
My DD and DSIL do not want lunches booked this trip, but not because they do not want the break. They have discovered the world of DIsney snacks, and since all of our trips have some focus, the snacks are on this year's schedule. Apparently we have missed a lot of good ones because Mom's need to hit TS restaurants filled them up! LOL!
I also suggest that if you are really not sure how you will feel, book your meals. You can drop them if you find you are too restricted. Or since there are only two of you, book the ones you know you really want wing it for the rest. YOu can check the AP to see what is open when you are getting ready to eat, and turn it into an adventure. SOme of our best meals were booked on the fly.
