If we decide to do waterparks and change our current ticket from 7 day to 5 day, what happens to the fp? Does the last two days of booked fp just get taken off?

Yes, you'll lose the last two days of booked FPs. Before you decrease your ticket entitlements, Cancel FPs for two of your park days. By choosing which FPs to Cancel, you'll maintain your "chosen" park days' FPs.
