There is a list of organized activities in post 2 of this FAQ as well as some other things you can do on your own like boat rentals. The listed activities vary from time to time but you'll get a current list when you check in.
If you want to be limit walking, I would consider Raratonga. It is the closest of all the longhouses to the GCH. Niue is nearly as close but you would need to use the elevator in Raratonga. Speaking of elevators, they are very small in the original buildings other than in Hawaii. Have you considered first floor as a request? Less walking as well in most cases.
Tonga Toast is great at Captain Cook's. I've ordered the turkey sandwich on multigrain from room service and imagine it is the same at CC....very good.

). And we got our request - Tokelau, 2nd floor, close to the lagoon side.
I've stayed at both resorts, and my last few stays I've been leaning towards the Poly. The transportation options are better because of the close proximity to the TTC. The grounds are prettier as well-I love walking around the grounds of the Poly in the early a.m. and evening.
