As long as pool hopping is still permitted or it isn't blacked out for a holiday period, you can pool hop to any pool at a Disney operated resort at WDW except for BLT pool, BC/YC/BCV pools, AKV/AKL pools. If you are staying at the BCV, you can swim at SAB or the BC or YC pools (as well as the Dunes Cove pool at the villas). If you are staying at AKV (either location), you can swim at either pool.
The CSR pool is lots of fun. The pool at the Polynesian is kind of small. The themed pool at the GF is also somewhat small and gets crowded when it's warm outside. We stayed at the GF and only used the pool near Sugar Loaf building and not the themed pool. The large/deep pool at the CR near the lake is nice for adults, but the themed pool at the CR has been updated and is fun. We liked the CR pools when we stayed there a few years ago.
You can't use the Swan/Dolphin pools, though, because they are not Disney operated.
Depending on the ages of your kids, the POR or POFQ pools are also nice. Haven't been to the CBR pool since they renovated, but I have heard it's rather nice especially with kids.
