My go-to AKL itinerary is usually, Safari, animals after safari, Kali rivers, snack, dinosaur (LL) bird show, lunch, Expedition Everest (LL) but now we want to fit in the Pandora ride and family is willing to pay the cost of a LL for this ride. How do we do this? I don't see the option to buy Genie plus in our account nor to buy LL for a specific ride-do we have to wait DAY OF to purchase those on our tickets? Thank you for your help!

You need to wait DAY OF, and actually the price is dependent on the day (ranges from $15 - $22 now).
For FOP you have two options I guess, one is rope drop, the other is ILL.
Rope drop: for Disney hotel guests, it can be walk on to 0.5 hour; regular entry is around 1 hour (I mean really get to Animal Kingdom 0.5 hour before park open time).
ILL: for Disney hotel guests, you can choose whatever time slot; otherwise see if the time is appropriate at park open time. If time is not appropriate, there are several "drop time", refer to the following page: https://www.thrill-data.com/waits/attraction/animal-kingdom/avatarflightofpassage/, the "Individual Lightning Lane Availability Map" section.
Then you need LL for Safari and Na'vi river as well. For Safari, return time is nearly instant after 2:00pm or something, but animals are not active then.

Thank you. Is genie plus something we buy per day as an add on to our ticket the day of that ticket or is genie plus something we just purchase once?

You have to buy Genie+ every day. It opens for purchase at midnight I believe but you can’t make any reservations until 7 am.
