Aging children up with free dining?

So I have a 3 and 7 year old and I remembered seeing something last year about aging them up to like 11 and 10 so they are considered Disney adults and can order off the adult menu if they want to. Just have to pay the difference in ticket price. Can you still do this and what's the best way to do it? Is it best to call? Once I age them up, can I bring their ages back down or is this more of a headache than it is worth?

Just call to do it. It's still possible and fine.
