You might want to check out EI's website. Quite a lot of info is even available in Dutch. Basically it's the same experience as you would have with any other proper airline long haul flight (so do not compare to Martinair, ArkeFly and other of those cr*p charter flights). AMS-DUB is your regular typical short haul flight, too short for anything but also no need for anything.
DUB-MCO is during the day, so the standard menus will be served around lunch time and dinner. MCO-DUB will find you having a late dinner kind and breakfast right before arriving at DUB. Can't comment on the quality or quantity in eco but in business it is better than many other airlines in Y.
If you want to know what amenities are available on your type of aircraft; again use either EI's website or look at seatguru.com. Proper up to date info.
Be prepared for the preclearance at DUB. You will not need to collect your luggage, instead you will identify your luggage on a computer screen while going through the process at CPB. So you will also fill out your paperwork already on Schiphol. By the way, check in, gate work etc. at Schiphol is handled by KLM with their usual way of doing things. Be aware that you will be departing from the B-pier at Schiphol and you might just find your flight to be (almost) at the end of the pier so plan accordingly for time needed to walk there. OK, back to preclearance at CPB in DUB. After identifying your luggage (they will have them on screen already, thanks to tags being scanned) and through the standard stuff you are used to you will be cleared for the US. NO TURNING BACK after that, unless going through it all again. When arriving at MCO you will be a national flight and thus no need to go through CPB.
In case one of your pieces of luggage might not be found a.s.a.p. or for instance travelling with special luggage (tagged through stroller, wheelchair, those kinds of things), you will be escorted to the CPB waiting area. No biggie, but you will have to wait for the guys working luggage to have ALL of your luggage gone through the automated system so CPB can clear them before they will allow you clearance. With some baggage that can result in it being brought up so you can identify IRL. No work for you, just look at it, go "that's mine" and done. Employees will take care of the rest. If there is anything in your luggage that requires extra looking into, you will also be sent here and those suitcases will also be sent there so they can be checked with you present. Some foods for instance can set this off. Again; simply identify what's in there and that it is yours and you are fine, as long as it is allowed and/or you have the needed paperwork if such is required.
All in all CPB personal at DUB is a different experience from clearing at any US airport. Lower workload sure does wonders. No grumpiness but polite, nice and helpfull officers.
If you haven't already noticed; be aware of the luggage allowance and especially the max. sizes allowed!!! Unlike most others, EI uses a different standard for any 2nd suitcase per person. If you find yourself wanting to buy an extra allowed suitcase on the way back to drag back all of your new stuff you will want to make sure to use a suitcase that is not too big. There is no difference in max. weight allowed, just in the sizes.
As stated before, no experience here with EI eco specific, seeing how I only can fly business. On that product EI gives many others a run for their money. Very good product for a bargain pricing, service that is better than most etc.
But honestly. Being the standard proverbial run of the mill tourist with no extraordinary demands or needs? As long as one books a proper airline it is all pretty simple straight forward. Be prepared to entertain yourself during the flight, if wanting to consume specific stuff take it along yourself and get to the airport on time.
