I currently have reservations for 7 TS places for 6 adults 1 high chair...does anyone have experience with showing up with one extra adult as my brother may join us for our trip?

Yes! My parents love to change their mind all of the time so this has happened a lot. So far we have always been accommodated. I just ask very nicely at the podium and am always prepared for a big no. So I would just be honest with your brother, hey, we will try and theres a good chance it will be OK but there's also a chance they could say no. You may want to ask about an hour earlier than your reservation just so your brother can make other plans if need be.
 
It's better to just plan for the extra person then just showing up. I've seen people turned away or made to wait.
 
I'd call and try to add him now, but if you have trouble then I'd give it a shot and just show up. We've shown up with one additional guest (last minute add on) and got lucky. If not we were prepared to just go to a counter service instead.
