Congratulations!!! So, it looks like you'll be getting married mid to late October. This is usually a pretty slow(?!) time of year at WDW!!
IMHO, slow or not, I WOULD advise anybody to make their ADR's, at the very least!! I don't think that would be construed as 'over-planning'. Ever since Disney came out with the Dining Plan, it has been harder and harder to just 'walk-in' most restaurants! Dining is a BIG think at WDW!! You don't have to 'micro-manage' your Honeymoon, just (A) - figure out which places you want to eat (B) - decide on a 'loose schedule' and (C) - based on their locations, figure out which meals best fit with your schedule. The way I do it looks something like:
Tues - MK (am), Epcot (PM)
Crystal Palace (B) @ 8:30 am, MK (9:30am - 12:30pm)
Resort afternoon break (1:30pm - 4:30pm)
Epcot - (5:00pm - 9:30pm) - Le Cellier (D) @ 7:00pm
I think you would find that a 'loose sched.' will allow total flexability and peace of mind for you just by knowing WHERE you will eat each night.
