Adding at the last minute

If we get there Jan 2 what is the latest that I could purchase the dining plan. Though I do hope to get an offer of free dining for then. Why not everyone else is right? Could I add it the day I arrive?

The dining plan has to be added to your Magic Your Way Package at least 72 hours before your check-in date. It can NOT be added at check-in.
