My husband and I are planning a Disney Cruise. We would like to spend a day or two at The World both before and after our cruise. I was wondering when I can make the ADRs for the days after our cruise? Can I make them when I book the ADRs for the first part of our trip or will I have to wait until 180 days out from when we check back in? If I can make them all at once and then we decide to cancel part of the trip (either the stay before or after the cruise) will it affect my ADRs?

These are two questions:

1.) Is Disney Cruise considered a resort stay for the purposes of making 180-day (+10) ADR's?

I don't know.

Keep in mind, if it is considered a resort stay, the +10 rule should still apply if you are trying to make all ADR's at once. The length of the cruise might impact that 10-day rule.

Example:
Arrive at WDW - Thursday & Friday (2 days),
Cruise (8 days - Friday thru Saturday)
End of cruise/back to WDW - Saturday & Sunday (2 days)

That last Sunday is outside the 180 (+10) window.

2.) If you cancel your trip will ADR's disappear?

Anyone can have an ADR at 180 days, it does not require a resort stay.

So, unless you cancel your trip with more than 180 days before your ADR, you should not lose those ADR's for your last nights. Those first nights would still be less than 180 days away, so they are not in jeopardy.

You will be making 2 separate resort reservations, so the dining ADRs can be made 180 days before each resort reservation. It used to be you could make 180 + the first 10 days so if your post cruise stay was within the +10 days you were able to make all the dining ADRs at one time, but recently the system was changed so it is now 180 + the length of each resort stay (up to a max of 10 days). So now, each resort reservation is treated separately.

No. Once you make the ADRs they will not be cancelled even if you cancel part of your DW trip.
