My daughter is about 40 inches tall and just turned 3, so nighttime pull-ups don't fit her anymore and we had to move to goodnights. I love them. The sides are soft and stretchy. You can also tear the sides pretty easy since they don't have the Velcro like regular pull-ups. Of course that's only for removal.
We had issues with regular pull-ups not holding enough if we went to dinner, so nighttime ones were good while she fit in them.
Also, the baby care center at least at MK really does rock. There's the room with the changing tables which are quite large and then there's a room with I think 2 adult stalls in it which would maybe be a good spot for changing your boys with a bit more privacy.
For what it's worth, the rapunzel bathrooms had more of the countertops for changing rather than the fold down things (I can't tell you how many of those fold down things I thought my giant was going to break).
Also, if you do need to lay them down at all, I love the arm and hammer munchkin disposable changing pads. My kiddo is all torso and those were wonderful to keep her nice and clean. Those are the best price on amazon. I think they're multiple dollars more per box at target.
Best of luck!! I'm sure you'll find something that works and I hope you have a wonderful trip.
