?? about off-site dinner breaks

For those of you who go off-site for some of your evening meals, how do you work that into your schedule? Do you sacrifice staying at the parks until closing time in order to do it or are there some places where you can eat quickly enough to get back to the park for a little while after dinner? We were hoping to save some money on meals this trip but our original plan would put us in the parks every night at meal time. Also, 2 of those evenings we will be in the WS at Epcot and we always have trouble finding something there for my DH and DS - they are basic meat & potatoes guys but they get tired of having to eat hamburgers. I was hoping to do some meals off-site in order to save some money and have a bigger variety of restaurants to choose from, but I can't figure out a way to make it work.

Oh, our trip is in June and the parks won't be open as late as usual. I've considered holding off on dinner until after the parks close but that would put us eating later than we like. Anybody have any suggestions? TIA:)
