Okay, for the dining experiences that cost two tickets, what if I won't have 2 tickets left? Can i pay a difference or will I be stuck paying full price?

You can save one previous table service credit to have 2 left or, if there are 2 of you dining, use the last 2 credits for one of you and pay out of pocket for the other's meal.

Both of the options GoodFairies mentioned are viable. However, there is no provision for using 1TS for a 2TS meal and paying "the difference" in cash. Sorry.
