Is there a place we can leave the strollers so we can take the kids on the monorail or boat to go get lunch at a resort? We'd rather not pack them with us when we go.
You can wheel the strollers right onto the monorails and boats. You don't even have to take the kids out of them. I would just take them with you because depending on where you are going, you may still have a long walk to get to the restaurants.
We left our stroller at Epcot once while taking the monorail over to MK for a quick jaunt (rode a couple of rides and came back). My ds was at the age where he was starting to not need the stroller as much and it was kind of nice not to be slowed down by it. We just left it in a stroller parking area inside the park, not far from the entrance and it was still there when we returned.

Are you talking about rental strollers or your own strollers? (The last sentence makes it seem like you don't want to bring your own strollers on your trip?)
If you mean a rental stroller, you just turn it in as you leave the park, and you can get another one when you return by just showing your receipt.
If you mean your own stroller, you can leave them inside the park in a stroller parking area, but there is no area outside of the gates to leave it. If you locked it to something outside of the gates, a CM would cut the lock and put the stroller in lost and found.
