a good diet cake??

OP, it's very thoughtful of you to want to do this, but the posters who suggested sugar-free, crustless cheesecake are exactly right. If she's really on Atkins that's about the only alternative as far as cake goes. I don't know what she means by "cheater's version." I would think that if she's cheating now and then she would just go ahead and eat a small piece regular cake, but it appears that she's not doing that. So while it's nice of you to try to do this, if you can't do a sugarless cheesecake, I wouldn't do a special cake for her at all. It would put her in a difficult position if she knew you did it just for her and she didn't want to eat it. Maybe you can think of something else to do for her - a small gift or something.

I have nothing as far as an adkins cake. Are you flying to CA again to stay with your friend at his mom's house? Are you leaving FL for good?
 

Sandra I think the best advice is to skip the cake all together as a couple of others have recommended. If your boss has turned down cake repeatedly, I feel it is rude to make one "for" her that puts her on the spot and makes her feel like she has to eat it when she has made it clear she does not eat cake at this point. Just get her a card, or some flowers instead. Show her you respect her by honoring her no cake wishes rather than forcing your idea of what a treat is on her.

I also see that you mention you have a cake coming up soon. May I ask why? I know it was very hard for you to find work and you have stuck it out and worked hard. I hope you are also simply transferring to a different location. Here is a bit of unsolicited but very sincere and well meaning advice: Please don't quit--you really, really need a more stable work history than that would provide--remember what your last job search was like, okay?
 
well i am moving out of state for right now. How it all turns out, i don't know.

My first stop is texas to help my aunt move, and then to cali to see how it works out. Hopefully when i come back, it's to move my stuff to cali.
We just had our 6 month review, and i got 89 out of a 100. It was kinda hard because my manager was thrilled with my work that day (first day back from cali) and said he could start giving me 20hrs a week and maybe 40 in a month if i keep up the work. And then i had to tell him i was putting in my two weeks. But he did say i could have my job back if i came back to florida, and he'd put in a good recommendation if i went to another qdoba. It's franchised, so no transfering. But even being back here just a week, i can see my stress rising again and it's showing in my work. I just keep telling myself only 1 week to go. I leave on saturday.
It wasn't easy sticking this job out. And i hate to be leaving now. But at the end of this month i have no place to live here, or the money to be moving into one. I needed to be getting 20-40hrs long ago to be saving for this move.

And last saturday when one of the other guys left, she ate a white cupcake. I just think a double chocolate cake that she makes is a bit much. And truthfully it does seem like a lot of fat, as chocolate has that fat appeal to it. Working in the food industry is really hard for keeping up a diet, especially when you get a free meal as a manager. I'm even trying to eat healthier in general. But it's hard when my favorite burrito is 1300 calories, come just under a 1000 without the tortilla.

I guess i'll head to the store to try and make a cheesecake. If she doesn't eat it, i won't be offended and her BF loves sweets, so it won't go to waste.
 
Substitute aapplesauce in place of the oil and you will cut out many fat calories.

I do the applesauce for oil as well as removing the egg yolks from the eggs and substituting one extra egg white. (calls for three eggs I use four egg whites). I also use the low sugar mixes when I can.

Frosting is usually regular unless I can find the low sugar frosting.

If I was really dedicated I would make my own from scratch, but I'm not a baker so I just have to jimmy the mixes when I can.
 
SO I am very confused. A few days ago you were preparing to move in wth your aunt and grandmother to help take care of your grandmother. I totally admit to being one of many who advised you against doing so, but you seemed very adamant about having to be there for your family. How did this suddenly turn into moving to California?:confused3 When you can't even pay your rent a cross country move is generally a very bad idea from an economic standpoint. Doing so well at your job (awesome by the way) and finally starting to care for your self was such a step in the right direction, why are you tossing it all aside now? I am just having trouble grasping what kind of offer you could have gotten in Cali to make a move seem sensible (not to be mean at all you just aren't at a place in your career to get offers that include relocation or even enough salary increase to justify moving--you are just scraping by hoping for more hours, you know). I worry about you making one impulsive decision after another and then paying the price as you dig yourself out of ever deeper holes. I do truly hope you have found some great full time work you can really count on in Cali and are not just running away from your stress in Florida.
 
Cali wasn't even in the picture until less than a month ago. It is very sudden, unexpected and on a total whim. I will have somewhere to live and some one to help me out. It's kinda gonna be like a month long vacation... And if i can make it, i'll stay.
My aunt was planning on moving here, and like the second day out in cali, she told me she bought a house in texas and is staying there. I already agreed to help her move, she really needs it, so i thats where i'm going to first. I originally told her that i'd stay there to help ma adjust to the new house and maybe find work for the time being. (there's also a possibility of working for my cousin, no formal offer though right now.)
i'd save a few bucks, then come back to florida in a couple months.
By the end of my stay in cali, i realized that it's someplace i want to be. I feel right being there. I don't really know how to explain it any better. It's really not that expensive out there. It's less than miami even, just a tad bit higher than orlando. And there is a qdoba nearby. Once this lease is up, i have nothing left, no roof and no car. So does it matter if i'm in cali, texas, or here??
Every one said not to live with my aunt... So i'm not now. It'll just be for a few weeks. I'm doing something that is for myself.
If ten days out there can make me one of the better employees in the store, hopefully living there will make me that good all the time. And i can have my job back if i do come back to florida. Turnover is so high, it's way easier adding some one that knows what they are doing.
 
Is the person in CA the guy you went to visit who has not job and live in his mom's basement? He has no vehicle. Where will you be staying and how will you get around?
 
You don't have to go crustless on that cheesecake.

Use almond or flax meal, mixed with a little cinnamon and splenda.

Cream cheese, eggs, sour cream & splenda.

Seriously, all i did was ask for a nice aktins friendly cake/desert for my boss. Cooking is something i enjoy doing for others and it's what i want to do. I just bought the stuff tonight for a nice cheesecake, with fresh strawberries. And i'll try making it tomorrow to give to her wenesday, i just found out she has saturday off this week.

I am sorry it upset you that I asked. I just noticed the "getting my own cake" comment and wondered what was up. You tend to post A LOT about your life on the DIS quiet often and usually want advice/sympathy/help. It is only because of those many posts that I recognize you as a poster and know what I do to have asked the question. I tend to have weeks with times when I am reading/posting quite a bit and other weeks when I hardly read/post at all. Other than on a cruise meet thread, I never go looking for what i might have missed and I figured you had probably posted about what was going on last week when I was around. Either way, based on your past tendencies it never occurred to me that you suddenly would not want to hear other perspective about your career/living situation as you have asked for advice about both repeatedly. So, anyway, I did not mean to offend you. I just worry about you (when I don't want to strangle you:lmao:). I hope you can make a good life for yourself in Cali and I won't say any more than that:flower3:

And well this choice, i just know is right for me. Don't need advice, don't need opinions, a nice good luck will do.
 
so my manager always bakes a cake for some one leaving (either leaving the company or moving to a new store). Usually chocolate with chocolate frosting.

well there's been like 3 or four cakes made, and she won't eat any of it because she says she's on an atkins diet "cheaters style".

Well talk is she's moving to a different store. I'm getting my cake this saturday, and i thought i should bring one for her too. One that she'll eat.

So what's the best kind of healthy cake?? I don't really have the time to make one from scratch. And since i'm flying out saturday night, i don't want to have left over food. So pre mix box cake would be good. I've got oil, and i can use up a 1/2 dozen eggs without a problem.

Well act one, take one... I've only got one chance at making this right.
It's been in the oven for just over an hour now, and oh does it smell good. I've got two containers of fresh strawberries that I'll chop up, and put into a seperate pan. That way, she can add them if she likes to.
Pretty much every one is on the schedule tomorrow morning, and she comes in at like noon. So I'll bring a frosting gel pen and let every one write their name on it.
 
If you chose to make the cheesecake, make sure to let it cool on the counter a bit before putting in the fridge.....

Hope it turns out perfect. The strawberries this year are oh so yummy!!

she loved the cake. And thought it was so sweet that i made sure it was atkins friendly. I also put the batman signal on it, cause that is her absolute favorite.

She was taken by surprise and thought it was the nicest thing ever. And i found out today, sunday will be her last day at the store.

She's like i have to share this, or else i'll eat the whole thing by tonight.
