Since this is kind of long, I am going to post it:
1/2 cup coarse salt (Kosher salt)
1 whole chicken, cut into serving pieces (I cut the breasts in half)
1 1/2cups all-purpose flour
1/4 cup cornmeal
2 tsp thyne or oregano (I use 1 tsp of each)
Pinch of cayenne pepper
1 tsp salt
1/2 tsp pepper
2 eggs
1/2 cup buttermilk
Peanut oil for frying
1. In a large bowl or pot, dissolve 1/2 cup coarse salt in 3 qpts of water. Rinse chicken pieces and add to bow. Cover, and refrigerate for 2 hrs. (Go do laundry) Remove chicken, rinse under cool water. Clear space in refrig to accommodate a wire cooling rack.
2. Mix together the flour, cornmeal, and seasonings, and place in a large resealable plastic bag. Shake. In a medium bowl, whisk the eggs, and whisk in buttermilk. Dip a few pieces at a time in buttermilk mixture, place in bag, shake and lay out on wire rack (that is placed on a cookie sheet.) Do this with remaining pieces. Place in refrig for at least 2 hours (now go do more laundry!
