A couple planning questions....help!

Okay, so now I have decided i am going to brave Disney World with a 2.5 year old sometime next year. I am thinking of late February (like the last week) or the first week of March. Which would be better?
Anyhow, this last trip I booked everything online and had no problems but I tried looking up prices and putting a package together and it says I have to call to do that. Can I make a package with Disney Travel this early?? If not, when is the soonest I can do that on the website? I really want to be able to pay this trip off before rather than use a credit card and pay it off after (like we are doing now).
Also, I see info for kids 3+ regarding the dining plan but nothing about kids younger than that. If we purchase the dining plan will it include credits for our son or do we have to pay for his seperately. I read that is one person in the package has the dining plan everybody has to and we are planning on taking my parents with us (free babysitting YEAH! :) so they would have it too but I need to know how much to budget for my son's food if he is not on the dining plan.

When we went with kids the first time in 12/04, our younger DD was 26 months. We didn't do a dining plan, but I also found that she was such a light eater that she shared meals with my then 4 yr old DD and ate off of our plates. At buffets, children under 3 are free which is why they most likely do not even offer the plan to those under 3. I'm sure if you wanted to, you could always pay the $13 or so a day to have the child's plan added for your son?

As far as when to go-you just have to find out when school breaks are. I know that here in MA, generally the kids are off the last week of Feb. and I know many of them head on down to Disney that week... could be a little more crowded??? The first week of March might be better as you might avoid the college crowd on their spring break??? Either way, they are both considered value season. I think you can start booking now if I"m not mistaken-I know I've booked a year or so in advance in the past :thumbsup2
