8 day non hoppers in late January

My husband, myself and 13 year old daughter have 8 day non hopper tickets we bought a long time ago. We are planning 12-14 days in Orlando at the end of January so that we can do a mix of park and non park days. I'm wondering what a good strategy would be....do we do 2 days at each park? Keep in mind my family isn't a coaster family (except me, where I figure I can single rider if that still exists) so they won't be doing Tron or Guardians of the Galaxy. I'm ok to skip 7 dwarves mine train and space mountain. We do want to do Remy, Frozen and Soarin in Epcot, Runaway Railway, RotR and SR in HS, FoP and Naavi river in AK and in MK we are good with the classics: Jungle Cruise, Pirates, Haunted Mansion, Small World, Dumbo. We will likely skip characters as well (maybe Mirabel since we've never seen her!). I think Splash will still be closed?
With all this, how would you allocate 8 days? I believe we will be staying off site at Drury.
 
That sounds like a good plan to me. I would need 2 full days in MK, Epcot, and HS for sure. I enjoy AK and 2 days would be fine with me, but if you think you only need 1 then maybe switch that one out for another Epcot (better food choices) or whichever is your favorite.
