You also might want to consider planning TS meals for a late lunch - the lunch menus are usually a slightly lower cost than dinner menus.

We ate at Rose & Crown and 50's Prime Time on our recent trip. Both would be good options for you with dinner entrees in a lower price range. We enjoyed both meals, esp the fish & chips at R&C.

You might want to consider splitting an entree between you and your DW. My DH and I do this all the time and the restaurants have no problem doing this. The meals are plenty enough for 2.

If you are using the TIW this will also save you $$. The card is also accepted at a few places at Vero.
