7 year old birthday at WDW... ideas help?

(I apologize ahead of time if this is long-winded... I'm kind of brainstorming as I write!!)

We're going to be at Disney in early February to celebrate two of our daughters' birthdays. One is just a toddler and is pretty easy to please, but my older DD is turning 7 on one of the days we're actually there. It's a surprise trip (we had to cancel a couple of trips in the past year due to illness and bad luck, so I didn't want to get her hopes up yet again in case we couldn't make it!) so I can't really ask her for input on what to do.

My plan was to book a character breakfast, go to MK during the day, and then go back there sans toddler for the Wishes dessert party to wrap up the night. Problem is, there were tickets for Wishes yesterday... today I go to book it... no tickets left. Grr! So right now, I have an 8:30 breakfast booked at 1900 Park Fare (which we've never done before but looks... girly). And then... nothing. I don't know!

DH and DS are going to do archery from 1-4:30 and they don't want to do the character breakfast with us, BUT they want to do her birthday dinner. And since it's her special night, grandma offered to babysit the toddler so we could have a toddler-free birthday dinner... somewhere. I'm thinking we'll have a girl's day for most of the day, go back to the hotel to clean up, and then meet up with the boys at night.

Problem is... I don't know what to do. BOG would be great for a special dinner but of course there's no way in heck I can get reservations for that this late in the game. (Yes, I tried against all odds.) Now that it looks like we're not even going to get the Wishes tickets, it might not even be worth it to make it a MK day... (We didn't get Park Hoppers this time.) We're not a fan of Illuminations, and although we like Epcot and probably go there most often of all the parks, I'm not sure there's anything really new there for us that stands out as a birthday celebration. We have another Hollywood Studios day planned too, so Fantasmic is out. (That's DH's favorite park and he wants to do that one all together for the full day.)

We could, in theory, go to the Coronado Springs restaurant, because she had a birthday dinner there a few years ago that she loved (the guitar player sang to her etc.) but it's kind of out of the way, seeing as how we're not staying there... And we can't guarantee a repeat of the last dinner. We also like Shutters, the Wilderness Lodge restaurant, etc., but again... not sure if that's unique enough.

Maybe dinner and a movie at Downtown Disney? Dinner at the Poly and go over to MK for a late night, even without Wishes? Spend the day at Fort Wilderness and/or maybe do Hoop-de-Doo? (I'm not 100% she'd like it.. probably, but not sure.) So... yeah... I don't know!

If you had a daughter turning 7 on a Disney day, how would YOU celebrate?

ETA: I also want to make sure whatever we have planned is not weather-dependent... It could be great weather, or it could be a cold and rainy day... I want her to have fun no matter what the weather. :)
 
We were there for my 2 older daughters 7th and 4th birthdays a few years ago. We had a character breakfast at Crystal Palace that morning. Then we went to Main Street and they went shopping (with gift cards that we gave them) for their choice of princess dresses. We spent the day at MK. I can't even remember what we ate for dinner. Make sure that you go to Town Hall and get their birthday buttons. We had cast members wishing them a happy birthday everywhere we went. I hope you and your daughters have a magical trip!

What about a tour? They have a family scavenger hunt at MK, I haven't done it but know my DD7 would love it. We did the Behind the seeds tour last summer and she was pretty into it.
 
What about the Pirate and Pals cruise? We did that on our last trip and the kids all loved it. We had snacks and meet and greet with Hook and Smee and then a boat ride to watch Wishes, followed by a meet and greet with Peter Pan.
 

I would go to Splitsville for a bowling party. It's really fun there and the food is good too. I think it would be a fun evening for everyone.
 
We love 1900 PF! They also offer an afternoon tea at the GF, as well as a character tea party if you think your daughter might enjoy that. If you will be in MK, I would consider BBB or PL. I hope your daughter has a wonderful birthday :)

We just celebrated our oldest's birthday on our surprise trip this past November. He also turned 7! :) I dropped hints about where he would like to spend the day if he was ever at WDW for his b-day, he chose HS. Also asked what he would like do to (Jedi Training). We bought him the birthday ears, went to HS, did Jedi training, saw everyone and everything he wanted. We also surprised him with lunch at Beaches & Cream. And in lieu of a birthday cake, got him a kitchen sink! Our waitress even put in the candle we bought and a Happy Birthday pick and got the restaurant to sing Happy Birthday! It was a fantastic day!
 
If you're going to be at the Grand Floridian or near I would suggest the My Disney Girl's Perfectly Princess Tea Party. The 1900 Park Fare breakfast is Mary Poppins whereas the dinner is Cinderella, Prince Charming, Stepmother and daughters. The Sense Spa also does Magical Manicures and Princess Pedicures! Lots of girly things to do there.
 
Here is what I would do. Have the whole family together for the birthday character breakfast. Spend the morning together as a family in the MK. When the guys go to FW, ask grandma if she will take the toddler back to the room for a nap and the girls do a special activity. Spa at the GF, or tea or something similar. When the guys are done, I would get a cake, a few decorations, pizza etc and do a small party back at the resort.That way grandma and toddler can join in. Maybe all swim together. Most 7 year olds are going to be pretty tired by this time. If she is not. maybe her, and mom and grandma, or mom and dad can head back to the MK just for a couple hours of special birthday time.
 
We did the perfectly princess tea party for my daughter's 7th birthday. It was expensive but so special and they get a beautiful doll .she is 16 now and still remembers it and talks about how special it was. We did it just as a special mommy -daughter thing but there were lots there with both parents and some daddy-daughter pairs. Read some reviews online about it
