I wanted to share my experience because I thought I was prepared for my 60+ ADR day, but I wasn't. Hopefully, this info will help someone else: each different reservation number in a split stay has its own 60 day window.
My 5 night reservation is all at Swan Reserve, but I forgot that I booked our first night separate from the other 4 nights. Therefore, I didn't know the Disney system would treat my reservation as a split stay when I tried to book this morning. I couldn't figure out why it was only showing me availability to book our first day. I chatted and that is when I remembered that I made 2 separate reservations. The CM then explained that I had to book dining for each stay (reservation number) separately.
I quickly searched and read that sometimes the phone CMs can/will link the split stays and let you book your entire trip. I called when the phones opened. Luckily, I got a VERY nice CM and when I explained my split stay she said no problem, she could use a temp reservation number to book all my days. She had to speak with her supervisor to get the temp number. That took quite a while, but she checked back in once to let me know she was still trying. She finally came back with it and asked what I wanted to book. It took a total of 2 hours from 6:00 am- 8:00 am, but I was able to book ALL the reservations I wanted. I was able to get:
Day 2: Beaches & Cream lunch (no availability showing online/app before I called)
Day 4: Chef Mickey's breakfast
Day 5: CRT breakfast
Day 6: Space 220 lunch

Although one CM did explain that they don't allow this since too many people were booking throw away resort reservations just to get a head start on the dining reservations, then cancel them once the dining was booked. Still sucks for those of us with split stays who aren't trying to cheat the system!
