6 or less ingredient dinners

I am trying to make healthier eating choices while still remaining within our grocery budget. I am also looking for easy dinner recipes with 6 or less ingredients. Let me know some of your favorites. I will start with one of mine:

Chicken with Applesauce in Crockpot

1 lb diced chicken, browned
2 cups unsweetened applesauce
1/4 cup of BBQ sauce.

Brown the chicken in a skillet and transfer to Crockpot.

Put applesauce and BBQ on top and mix together.

Set on high for 1 hour

Serve with rice.

Cheap, easy, and super tasty!
 
Tonight I made "Unstuffed Cabbage."

Brown ground beef. When browned add in a can of tomato sauce and 1/2 c. rice. Cook until rice is almost finished. Layer cabbage and beef/rice mixture in 9x13 pan, cover with foil and bake 1 - 1 1/2 hour until cabbage is tender. (I don't know if this counts as "ingredients" but I also season with salt and pepper and add garlic and onion if I have it).

Super filling and I actually got another 8x8 pan of it to be frozen (and we ate maybe a third of it). Plus, aside from the beef, it's pretty cheap ingredients!
 
We had "spaghetti" for supper tonight.

1 spaghetti squash
1 jar Newman's Own Tomato & Basil sauce
1/2 lb. lean ground beef

Cut squash in 1/2 length-wise. Remove seeds. Place cut side down in pan with 1/4" water, cover with foil & roast at 350º 1/2hr-45min. Meanwhile cook beef, add to sauce. Fork squash out of "shell". Serve sauce over "noodles".

Mixed green salad & dressing. YUM!

Under 500 calories for 3/4 c sauce, 1 c squash, 2 c greens & 2 tblps dressing :thumbsup2
 
Tonight we had stuffed peppers.

We enjoy Apricot chicken 3 ingredients. 4 or 5 chicken breast or 6 to 8 thighs, jar of apricot preserves, packet of onion soup mix.

Mix soup mix and preserves in jar, pot over chicken in crockpot. Cook on high 4 hrs or low 7-8. Make rice and broccoli on side.
 

Can we presume that salt, pepper, and water can be over and above the 6 ingredient limit??

If you are willing to bump up your ingredient limit to 8-10 ingredients, there are several more recipes there that might suit you..........P
 
One of my favorites actually falls into this!

Chicken breasts
Russian dressing
Apricot preserves
Onion soup dry mix
Rice
Pepper

Cut up 2-3 chicken breasts into 1 inch pieces. Put them into a foil lined dish and sprinkle with pepper. In a bowl mix half bottle of Russian dressing, 1 packet onion soup mix, and 1-2 tbsp apricot preserves. Pour over chicken pieces and turn them to coat. Bake at 400 degrees for 1 hour - 1 hour and 20 min, basting frequently (I do every 20 min).

Make rice. Serve chicken over rice.

So good and easy and the ingredients is enough to make it twice. My husband hates dressings, but loves this. The favors work well together.
 
I Love ...

Grill together scallions (or onions), garlic cloves in olive oil
when browned, add in 1 package frozen spinach and grill a bit more.
add in 2 table spoons or so of ricotta cheese
when done put on burner to cool, (just cool enough to spoon into tomatoes), while preparing.

1 large tomato per person cut off top and make a few slits to open it up, fill with mixture. Cover with Motz cheese and put in glass baking dish.
fill rest of mixture around tomatoes.
Then add enough water to "cook/steam it" about 1.5 cn or so.
Bake in oven for about 20 - 30 min (depending on tomatoes size. ) cheese will melt, and tomatoes will get soft.


* I have used 2 pks of spinach, and also added a can of tomatoes to the spinach mix on the bottom for a delish side dish too.
* I have used cottage cheese instead of ricotta, it is 90% as good.
* I have added curry spices to the spinach on the bottom. .. good too

I usually serve with a vegi side, like a butternut squash, or corn on the cob, I have served with pork chops, (but usually it is the main dish), or pasta with butter and parm.
 
Very easy one:

Jar of salsa
Can of black beans (drained)

Throw it all in a crockpot 6-8hrs until Chicken falls apart. Shred the chicken and mix well.

Add any toppings you've got (cheese, lettuce, sour cream, avocado, etc.) and make tacos, salads, burritos, sandwiches, etc.
 
Tonights dinner and we have enough leftovers for tomorrow. I think this is really good and easy.

*** I dont use grated Parmesan cheese so this is actually 1 ingredient over. I dont use parchment paper either. I use small curd cottage cheese sense its cheaper.

Reynolds recipe




Reynolds® Parchment Paper
1 pound ground beef, browned and drained
4 cups (about 32 oz jar) chunky garden-style pasta sauce
1 tablespoon Italian seasoning, divided
1 package (16 oz.) ziti pasta, cooked and drained
1 package (8 oz.) shredded Mozzarella cheese, divided
1 container (15 oz.) ricotta cheese OR cottage cheese
1 egg
1/4 cup grated Parmesan cheese, divided

PREHEAT oven to 350°F. Line a 13x9x2-inch baking pan with Reynolds Parchment Paper.
COMBINE ground beef, pasta sauce and 2 teaspoons Italian seasoning. Stir pasta into meat sauce; spread half of mixture evenly in parchment-lined pan. Top with half of Mozzarella cheese.
COMBINE ricotta cheese, egg, 2 tablespoons Parmesan cheese and remaining Italian seasoning; spread over Mozzarella cheese in pan. Spread remaining pasta mixture over ricotta cheese mixture. Sprinkle with remaining Mozzarella and Parmesan cheeses.
BAKE 35 to 40 minutes or until hot and cheese is golden brown. Let stand 10 minutes before serving.

Salt, pepper, and other similar spices are not included in the 6 ingredients, since most of us have those in our pantry's most of the time. I am loving the recipes, we are always looking for new, budget friendly ones. Here is another of our favorites:

Apricot Glazed Porkchops

7-8 thin sliced porkchops
Jar of apricot preserves (regular or no sugar added)
Cinnamon (1 tsp or to your taste, we use a bit more)

I use 1/2 jar of preserves and mix the cinnamon into it. This is your glaze.

Grill the porkchops.

Spread the glaze on the porkchops.

We serve it with salad and sweet potatoes.
 
This is so easy and yummy!

Crock Pot Pesto Ranch Chicken Thighs

8 boneless skinless chicken thighs
6 ounce jar of prepared pesto (I like the sun dried tomato flavor)
1 package Ranch Dressing Seasoning Mix
1/2 cup chicken broth

Place chicken thighs in crock pot and spread with pesto. Sprinkle with ranch dressing and pour chicken broth over. Stir gently. Cook on high 3-4 hours or on low 6-8 hours.
 
I know this has more than 6 ingredients, but it's super easy and very tasty. If you don't like 'heat' then substitute regular tomato juice and a can of diced tomatoes in place of the Spicy Vegetable juice and the Ro-tel, also leave out the jalapeno.

1950s Easy Supper

1 pound ground beef
3 cups dry noodles ( I use whole wheat rotini)
3 cups tomato juice (I use Spicy Vegetable Juice)
1 can Ro-tel
2 tsps Worcestershire sauce
2 tsps. Celery salt
1 tsp. dried basil
1 clove garlic
1 onion chopped
1 jalapeno ( chopped fine) - optional
1 can corn (if desired)

1. In Dutch Oven or Pot (6-8 qt) Brown ground beef, add onion,jalapeno & garlic, cook till tender.
2. Add remaining ingredients and simmer 30 minutes.
 
Cranberry Pork Roast in Crockpot

Pork Roast
Can of cranberry Sauce
2/3 cup French Dressing
Large Onion

Slice Onion, Put in CP with roast. Mix cranberry sauce and french dressing and pour over top. Cook low six or seven hours. Slice meat and put back in for a bit to absorb juices.

Buffalo Chicken in Crockpot

Chicken Breasts
Pkg of Hidden Valley Ranch Seasoning
Small Jar Franks Hot Sauce
1 tbsp of butter

Cook and shred chicken...serve in flour tortillas lettuce, cheese, etc.

BBQ Brisket

One Large Sliced Onion
Flat Cut Brisket...seasone with salt and pepper
1 Jar Sweet Baby Rays BBQ sauce

Can do in oven or CP

Jambalaya

I use Zatarains Rice Mix and just add chicken sausage, shrimp, etc.

English Muffin or French Bread Pizzas
Quiche....eggs, milk, cheese, veggies or ham or bacon
Enchilada Casserole, ground beef, cheese, enchilada sauce and tortillas. Layer like lasagna. I also add rice to stretch the meat.
Chicken Drumsticks are cheap and easy.
Hashbrown Casserole with ground beef. I use recipe from Taste of Home. Kids love this one!

This is so easy and yummy!

I add a couple handfuls of corn to this and 30 minutes before cooking is complete add 8oz brick of cream cheese. I serve this with rice. This is one of DH's favorite meals and it's sooooo easy!
