6 on Dining Plan Only 2 at Meal

Okay, we are leaving in less than 2 weeks, but had a quick question. There will be 6 of us on the DDP. One night 4 of us will be going to dinner at Jiko, and 2 for an anniversary dinner at California Grill. Is it going to be a problem that the KTTK card says 6 adults but only 2 or 4 are dining? We'll be staying in a 2 Bedroom at SSR so we'll all be in one room.

It doesn't matter if all of the party are dining together. Our party split up on several occasions and had no issues.

as long as you have the credits this would be no problem.The main rule is not more eating on ddp that what states on room key

The flexibility is great, but there can be a downside to this (as DH learned!) One person can use the other's credits. What happened to us in April is that our card listed 2 people, 5 nights, so we had 10 snack credits. Well, he golfs every day, so I was off by myself and using up those snack credits. For some reason, when he went to use one on the fourth day, it said they were all gone. I wonder why?
