3 adults 2 kids any suggestions?

It really depends on your budget. I went to Disney in August with my sister, her husband, my niece and nephew. We opted for a room at the Polynesian. My sister and her husband shared one bed, I shared a bed with my niece, and my nephew slept in the day bed. We felt that the room was big, and we never felt squished in the room. The only down part was that getting ready in the morning took a long time, with five showers to fit in.

We would have liked to try a home away from home resort, but we would have needed a two bedroom, and it just wasn't in our budget.

On a previous trip, we stayed in a wilderness home (now cabins) at Fort Wilderness. This option is great for a three adults and two kids. There are bunk beds and a full sized bed in the bedroom and a murphy bed in the living room. There's also a kitchen, so you can make meals in. There's still only one bathroom though.

Depending on your budget and who the 3 "adults" might be:

** 2 connecting rooms at one of the value resorts. This has the advantage of two bathrooms, two TVs and a little more privacy.

** a 2 bedroom villa at one of the DVC resorts. This option provides 2 bathrooms, 3 TVs, a VCR or DVD, a washer & dryer right in the room, a full kitchen (equipped with refrigerator, dishwasher, microwave, stove, toaster, and coffeemaker as well as pots, pans and dishes/silverware for 8), a jacuzzi tub and lots of privacy.

** a room at one of the deluxe hotels that sleeps 5 or a room at the POR that includes a trundle bed.

If you can afford it, the 2 bedroom villas are just awesome and will spoil you forever. If $$ are a major concern, I'd go with the 2 connecting rooms at one of the value resorts.

I would recommend the YC. You and DH can sleep in one bed, DD's in the other and your MIL can sleep on the daybed (I am not sure if all of the rooms have a daybed, make sure you ask) We did the 2 rooms at ASMo when we traveled with my mom. It turned out to be a mess - we had adjoining rooms until my mom's room had a problem with the air conditioning unit leaking. They didn't have 2 other adjoining rooms so they left uswhere we were and they moved her upstairs and around the corner - it was a pain. I would definitely go with one room at a deluxe instead.
 
You may be able to get two connecting rooms at the Swan or Dolphin for what one room at a Deluxe would cost you. They have their teacher, gov't employee and military discount or Annual Pass discounts (only one person in the party would need to purchase the annual pass for the discount for both rooms). Another discount is through the Entertainment book, their rates are a little more but still significant compared to the rack rate.

We love this area so close the the BC/YC and the Boardwalk and their dining options. We love having the ability to walk around at night and not being "trapped" at the hotel. We love having the option to walk to/from both Epcot and MGM.

I would seriously think about getting two rooms somewhere or a suite. Three adults and two kids are a lot of people to put in one room no matter how big the room is. I just remember doing it with my parents once, not at Disney but on a trip to Williamsburg. It was DM, DD, myself, DH (before we were married) and DS. Though sleeping arrangements went smoothly it was all the other stuff that made things stressful. Getting ready in the morning, suitcases and clothes all over the place, the room constantly looked like a bomb had hit it because there was not room to store anything. Also the one bathroom was an issue. I can remember having to run down to the lobby one night to go to the bathroom because it was "occupied".

Whatever you decide you will have a great time. Have fun planning its my favorite part.
 
We always travel with that same family group -- me, DH, two DS, and my mother, who is single. Last year we got two connecting rooms (Disney cannot guarantee this, but you can have the request put on your res.) at AKL. This year we will be at the Swan (on teacher's discount) in two connecting (again, hopefully) rooms, unless we see some big spring discounts like we did last year on deluxes.

I highly recommend two rooms, if your budget permits. It gives the kids a little more room to spread out, and if your DH's mom allows, they could "camp out" in her room one night, giving you and DH a "night alone"! It was also easy in the morning to send the kids to my mom's room and get ourselves washed up, then bring them back to our room so my mom could get showered.

We stayed in two connecting rooms at the All Star Sports. DH, DD, DS, and me in one room and my brother in his own room. It was great to put the kids to bed, then go "next door" for a beer and some TV. The two bathrooms was a big plus - and the price was right! These rooms are small, but if you have two there's room to spread out!

When the CTH code came out for January, I seriously considered getting two rooms at POP Century for just my family of four. That would have cost 110 a night - for two room (bathrooms!).
 
I agree with CarolMN's 2 bedroom villa idea. It'd be nice for the grandmother to have her own space, the kids to have theirs, and you and hubby to have yours!

You can rent points from a DVC member for MUCH cheaper than paying full price. A 2 bedroom villa in the fall would cost from about $220/night (Sept. Sun.-Thur. @OKW) on up. Don't forget that's with a kitchen! Check out the DVC page and points calculator.

I would also recommend trying to rent DVC points and staying in a 2 bed villa. As other posters have suggested having a kitchen is a huge advantage s is having 2 bathrooms and seperate bedrooms. I would recommend the Beach Club Villas as there is a lot to do around the area and your MIL might enjoy the close proximity to Epcot.
 
For us, money was a serious consideration. Primarily because we wanted some great meals :p

We found two rooms at Pop cheaper than one room anywhere else. The only thing close was the cabins at FW.

We had a deluxe savannah view room at AKL this past summer. We had one queen bed, bunk beds and the daybed. The daybed seemed to me to be the size of a regular twin bed. Maybe it was a bit smaller, but I slept on it with my three year old for most of one night when he "needed mommy". I think your mother would be comfortable on it as well, and my kids loved the bunk beds. I don't know if they have a daybed in a room with two queens or two doubles or just the bunk bed configuration.
