I found this recipe on Allrecipes.com some time ago, and thought it sounded really interesting. Maybe I'll try it this year. :)


Thanksgiving Won Tons

Yields: 20 servings

"Wontons with a turkey, cranberry, and almond filling."
INGREDIENTS:
1 1/2 cups cooked turkey breast meat, shredded
2/3 cup dried cranberries
1/3 cup slivered almonds
1/2 cup cranberry sauce
1 (14 ounce) package wonton wrappers
1 quart vegetable oil for frying

DIRECTIONS:
1. Mix the turkey, cranberries, almonds, and cranberry sauce in a bowl. Place about 1 teaspoon of the mixture in the center of each wonton wrapper. Fold wrappers over filling, moisten edges, and press with a fork to seal.
2. Heat the oil in large skillet or deep fryer.
3. Fry the wontons in the hot oil until golden brown. Drain on paper towels.

Ok I have two great ones for you!

Turkey PotPie -

Get a large muffin tin.
Get puff pastry from the frozen section of your food store
Roll out the pastry a bit so you can make 6 squares that will fit in the large muffin tins (you are making 3 potpies.
Put the bottoms in the muffin tin, poke a few holes with a fork, and put it in a 350 degree pre-heated oven for about 20 minutes.
Now combine cubes of turkey, stuffing, and your greenbean casserol. If it seems a bit dry, just put a bit of your gravy in the mix as well.
Stuff that in the muffin tins,and cover with the other puff pastry tops - dot with the fork before as well.
You can even brush with a little egg wash to make it look pretty. Cook until brown - about 20 minutes.

Turkey Cutlets:
Make thin slices of the breast
Drench it in flower, then egg, then breadcrumbs.
Pan fry till golden brown.
Then you can do whatever you want with it - either make a really yummy sandwich with mozz and tomato sauce, or keep it traditional and use stuffing and that cranberry jelly stuff.


Its such a shame I'm not cooking this year.... so sad......
 
Shepherd's pie. Chop turkey fine, add celery and onion they saute with poultry seasoning. Top with frozen peas, then mashed sweet potatoes, spread evenly. Add about 2 cups of grated sharp chedder and bake long enough to allow the cheddar to melt. Shepherds Pie!!! Saw this on Rachel Ray.
 

Last year I shredded some of the meat and made white enchiladas. They were delish. I found the "white enchilada" recipe years ago because my sister is severely allergic to tomatoes. The recipe I found used mushroom soup for the sauce, and you use jack cheese instead of cheddar, and some canned green chilis. Since my daughter is allergic to mushrooms I use cream of chicken soup instead, but you could probably use all kinds of different white/cream sauces. For that matter, they would probably be good with a regular enchilada sauce and maybe some picadillo seasoning or fajita seasoning mixed in with the turkey. I would still go with jack cheese or pepperjack cheese over the cheddar even with regular enchilada sauce. Sorry for the rambling ideas...I don't really do recipes unless I'm baking.
 
I have a tradition that I proudly plan to continue this year. I store all my thanksgiving turkey and stuffing leftovers in the freezer until two weeks before Thanksgiving the following year. At that time, I take them out of the freezer to make room for the new turkey; contemplate using them for dinner; decide that is digusting and then throw them all away. That's the whole recipe...easy, right?:lmao:
 
I would be hung, drawn and quartered if I attempted something creative with the precious leftovers destined for turkey & gravy over buttered noodles. I swear I could feed that to my family every night and they'd be thrilled. :laughing:

I'm going to try to sneak some aside for those wontons though.
 
What's wrong with turkey sandwiches? We make ours with mayonnaise, a little salt and, if we have any leftover cranberry sauce, we smoosh that on top with a fork. To me that's the best part of a Thanksgiving dinner.

I also like to throw all of the leftovers in a pot, boil the meat off of the bones and make turkey soup. I add barley to mine as a thickener but it's a soup, throw in whatever you like. The nice thing about that is that you can portion it up, put it in freezer bags and make it last through the winter.

I love turky sandwiches from leftovers! I also like hot turkey and gravy over buttered bread. (healthy huh?)
 
I just pick what I want and either nuke it or make a sandwich.
 
Usually after a day or two of leftovers and turkey sandwiches, we shred whats left of the turkey. Then we make turkey taquitos out of it.
 
I saw a really yummy looking dish on the Food Network the other day for leftovers. I meant to look up the recipe. It was turkey hash with fried potatoes, onions, peppers and a couple of other things. It looked great.
 
I love turkey leftovers. After the sandwiches, we always do enchiladas, then pot pie, followed by soup.
 
I’m not to good at turning leftovers into a new dinner. I guess I am not that creative. The only thing I do is shred the remaining turkey, mix with gravy and serve over mashed potatoes. Add some veggies on the side, throw in some rolls and it is a quick 'n easy dinner that everyone will eat. That is always a plus for me!
