2017 - Some Signature Restaurants Removed from Dining Plan?

We've always gotten the deluxe dining plan as we enjoy eating at the signature restaurants. Last trip we ate at Monsieur Paul's twice. In making reservations for our 2017 trip, it says that select dining plans are not accepted, there is no mention of anything except that it's 2 equivalents for the children's menu. I'm hoping this is an error, as the removal of some signature restaurants as options will most likely tip the scales in favor of not getting the dining plan this time around.
 
1) Restaurants sign onto DDP at different times of the year.
. . . Disney-owned eateries sign contracts on October.
. . . Non-Disney-owned eateries sign contracts in December.
. . . The DDP lists are finalized in December or early January
2) Just wait for the new contracts to be signed.
3) This also sets the menu for the next year, so the menu items are subject to change based upon the reimbursement rates.
 
In addition to what TheRustyScupper posted, it is generally safe to assume a restaurant on plan for the current year will be on it the following year (unless it's actually closing). While it has happened that a restaurant has "dropped" from the plan, I can't for the life of me remember the last time that actually did happen.
