Chicken Parmesan pasta bowls sound delicious ! Care to share that recipe![]()
SUPER easy... but to be honest it was more like chicken cacciatore than chicken parm. I just threw some raw meat (pork in my case because of DS's allergy but you would probably use chicken breast, boneless and skinless) into the crock pot with a large can/jar (or two) of spaghetti sauce and a can of diced tomatoes. Cook on low all day and shred the chicken when done.... it is essentially like making pulled pork but with spaghetti sauce. I served the chicken/sauce combo over whole wheat pasta for my DS and over shirataki noodles for DH and myself. Topped each bowl with some shredded mozzarella (like you would put on top of chicken parm) . I also added sauteed mushrooms and red bell peppers to mine, to bulk it out a bit. It was super easy and super yummy! Next time I'm adding sliced onions to the crockpot.
I am still here! I am in my last 6 days before I leave on vacation and am starting to feel very stressed out with all the things that need to be done before then...
Don't stress... vacation is supposed to be FUN! (That being said, I TOTALLY understand the feeling!) HAVE FUN!!!!!!...............P




I know that I have lost weight. My clothes start to fit well. I can see it in the mirror. But I am afraid that the number of the scale is still higher than I hope it is by now. And I am afraid that this will set my mood for the vacation and that I will go into it thinking it does not matter anyway what I eat. So, the strategy is to step on the scale tomorrow morning for the first time and then to weigh me everyday until I leave on Thursday. I know that my weight often fluctuates and hopefully there will be one day with a nice number. I am already trying to set my expectations very low. Originally I was thinking that I won't step on the scale until my smallest clothes out of my usual wardrobe start feeling lose. But I guess that won't work... I guess I just need to keep telling me that it is all about the inches and not about the pounds and I know I have been successful with the inches!
