three meals are included per night of your stay-

my question-

can these 3 meals be 'table service' every day of our stay ?

for example-

breakfast at Captain's Grille at Yacht Club

lunch at Le Cellier

dinner at Chefs de France

If I wanted to, could I do this everyday & avoid counter service places?

Yes, absolutely. In fact, counter service (well, except maybe Pepper Market) is a relatively poor use of Deluxe Dining Plan credits.
