They do charge a corkage fee of $15 if you bring the bottle to dinner with you. However, if you want to avoid the fee, you can. Just ask your stateroom host to bring you two fresh wine glasses each morning when they make up your stateroom. Or, if you only have one bottle, just run up to Signals and ask for a couple of wine glasses. Then, open the wine in your stateroom (we like to enjoy a glass while getting ready for dinner) and poor yourself a glass to take to dinner with you. They don't question you about where the glass came from.
