1st Trip with GDaughter- Need Glutten Free Food ideas for Tent Camping

We are going on our first tent camping trip ever, pretty much have gotten the "don't forget to bring" list done, but i am having trouble with ideas for side dishes for dinners and lunches. does anyone have any ideas or experiences with this. We have just down sized from a 28' TT to a tent, and it has been interesting. My husband lost his job a month ago and we are trying to downsize in alot of ways. I have the main courses set such as hot dogs, hamburgers, steak, etc, but don't want to have chips or baked beans every time. No microwave,:confused3 no electric skillet, just a gas grill, and the fire ring. Any help would be appreciated.

Thank you very much, great ideas. :worship: i try to keep everything down to Veggies, fruits and meats etc, with little or no process foods, seems to help keep her Gluten free. Just trying to come up with ideas for camping so she will eat normally. Need to find GF graham crackers for smores....she loved those before her diagnosis of Celiac.
 
Grilled Veggie packets.. I'm sorry I'm not help with the Gluten Free.. but recently I tested the theory that you could store grilled veggie packets in the cooler for a few days, dab with butter and seasoning and throw on the grill, and it worked out great! I specifically used potatoes, drenched in mayo, parmesean cheese and chives, but I'm sure you could use what ever you liked. This was the first time I had tried grilling the veggies in a foil packet. I'm hooked!
 

Banana Boats. Take a banana with the peel on cut across the top long ways with out peeling it. Scoop a little bit down the middle i use my finger stuff in Choc Chips & marshmellows wrap in foil and put on the grill rack. We have use butterscotch chips also. Eat with a spoon.

Did you use raw or precooked potatos?
 
I enjoy roasting fruits on the grill.
Quick and easy. Not a lot of mess.
And they help ease the cravings for sweets. My favorites are watermelon, pineapple and peaches.

I make veggie packets all the time with fresh produce. I always use raw. The grill is a great cook. Steams it in the packet with however you want to dress it. I use olive oil with seasoning, salad dressings, etc. just depending on what else we are having. Recently seared a tuna on the grill. Made a veggie packet of asparagus, water chestnuts, carrots and pearl onions with a ginger dressing (that we used like a gravy for the fish). It was so good, my DH said to write it down so I can do it again. :lovestruc

My daughter is celiac, too. We eat potatoes, because I love everything potato, lol, but we eat LOTS of rice, which isn't so bad because you can really do a lot with different kinds of rice. I would grab a few of the boil in bag rices, or minute rice so you can put a pot on the side of the grill for it (or use a crockpot with real rice--we do this for coconut rice often) and have that for a side once or twice as well.

Our fave FW meal last trip was salmon on the grill, and on the cooler side of the grill I used one of my camp fry pans to stir fry some bok choy, bean sprouts, cabbage and a few other stir fry veggies and in the crock pot I had made coconut rice while we were out for the afternoon. It was so good, it is on the menu again for next trip. :thumbsup2

Did you use raw or precooked potatos?

raw (cut very thin), it takes apx 45 minutes but they turned out ALOT better than I expected. The key is to keep them over indirect heat so they dont burn. Also, non stick foil helps a bunch.
 
The whole foods there should have gf grahm crackers as our local one does. You could boil some amys mac and cheese also. If u hve the extra money invest in the castiron sandwich cookers andmake stuffed pizza - gf bread ,sauce, cheese, bread. You can make french toast for bfast too!
