1st anniversary coming up - how to defrost cake top?

I cannot believe our first anniversary is next Friday - time flies! Our DFTW was perfect I'm really excited about our anniversary!

We were lucky enough to be able to keep the top of our cake, and I know I didn't do a very good job of saving it, I just kept it in the box and wrapped the whole box in plastic wrap, but we do want to try it for our anniversary. Does anyone know the best way to defrost it? When should I take it out of the freezer? Should I put it in the fridge or on the counter to defrost? Any information would be most appreciated - TIA!!

Congratulations on your one-year anniversary! Time flies, eh?

As we aren't married yet, I can't give you personalized, experienced info on how to defrost the cake, but I cheated and looked online.

The site I found advises the following: "One day before your 1st anniversary, begin defrosting the cake in your refrigerator. After about 2 hours, remove the cake from its wrapping and continue to defrost. Just before serving, let the cake rest at room temperature."

Do you think you could let us know if that worked? I was told by a few people that it wasn't worth trying to save it because it didn't taste very good. But I really wanted to save it and eat it on our first Anniv. too! So please post an after thought on how it turned out! Thanks!

It really won't taste very good. Think about if you kept butter in the freezer for a year--you could still use it, but it sure wouldn't taste very good.

It's really not for the taste, though, is it? It's for the sentimental reasons. I am going to take pictures of my cake, and have a baker locally recreate the top tier for our one year anniversary, simply because it won't be at all practical for me to try to save it.

Yeah, I know it won't taste as amazing as it did a year ago but it's for sentimental reasons and tradition more than anything. We are celebrating with dinner at a very nice local restaurant - the same restaurant we celebrated our 1-month anniversary - then a quiet night in, eating stale cake

My brother and sister-in-law did it for their 1st anniversary (they just celebrated their 7th anniversary) and her cake actually tasted better a year later! But, she said she can't remember how she defrosted it. We'll see . . . I will let y'all know how it goes.

We did this in August. I just stuck it in the fridge and let it defrost. The icing was the only thing edible. The cake tasted absolutely horrid. I still ate most of the icing, just skipped the cake.

Remember guys...if you still live in or are visiting the Disney area, you can have the Grand Floridian bakery re-create the top of your wedding cake with exactly the same icing and flavors as you did on your wedding day. Its very cheap and much more tasty.
They will even deliver it to your room for a romantic dinner.
I will probably still try my top layer I saved anyway too.

So, here is an update on the 1st anniversary cake - thank you for all of your tips and information!

It was for tradition, and I really wanted to eat some of our original cake for our anniversary this past Friday, and I must say it wasn't bad! I actually ate a whole piece Friday and another piece on Sunday! The cake itself was not dry at all, the raspberry mousse filling tasted the same as a year ago, and the buttercream under the fondant was really good DH would only have a bite, he was afraid of year-old cake and I had to laugh - this is the same guy who once ate a fried bug overseas!

For those looking to keep the top and have it on their 1st anniversary, here's what I did. The WL kept it in their freezer after the wedding and my in-laws put it in a cooler with ice for the drive home, then into their freezer. When we got home from our honeymoon I wrapped the cake itself in plastic wrap, then wrapped the whole box in plastic wrap and it stayed on a shelf in the back of the freezer. Thursday morning I took it from the freezer to the fridge. Friday morning I unwrapped the cake but kept the box itself wrapped since it never closed right anyway. Then, about 1/2 hour before we wanted to try it I put it on the counter to finish defrosting. I was VERY surprised that it still tasted good! I think the fondant icing over the whole thing really helped to preserve it. I didn't eat the fondant, but it "peeled" off nicely and the buttercream underneath was very yummy! I know my sister-in-law's cake tasted better a year later and I'm glad mine tasted almost as good as the first time - it was a sweet memory

Awesome JandJ! I'll be keeping this thread in mind when its time to defrost ours. We're having fondant too so hopefully it will keep things nice and moist underneath the buttercream

A local bakery does the same thing, and it worked out wonderfully for us! They actually keep your design on file for you and do it at no charge if you had your cake made with them originally (something about not wanting to ruin their reputation with gross cake ) but they will also gladly recreate one for a small charge that wasn't made there. DH and I did that on our first anniversary and it was spectacular!

From experience... toss it - and go to the bakery that made it and have them make a small cake decorated like your wedding cake.

Ours was terrible tasting (such a disappointment because it was SOOOOO good at the wedding). We had the bakery make up another one and it was perfection!

Hey Jen! I am glad I was "wrong" and your cake was still great! You are probably right, the fondant acted like a sealant. (LOL--what does that say about fondant? ) But it doesn't matter; most people don't eat the fonadant anyway, it just always looks so amazing. The important thing is you had a great anniversary celebration, and you were able to enjoy both the sentimentality and the flavor of your cake.

That's so funny about your DH. Men are so funny sometimes---and they say we are the illogical ones!

Slightly off-topic, but how long will the resorts keep it in their freezer? We're getting married on a Thursday and not leaving until the following Friday (and we're switching resorts during that time, too).

It probably depends on the resort. Our EM left it with the front desk at WL and then I went and checked on it later that evening and they said it was safe and sound in the freezer. They had a note on it (which I kept because I'm too sentimental ) "Do not stack anything on this box!" and our names, room number, and date of our check-out. So, I should think as long as they put all of that info on the box it would be fine as long as you need to leave it there and you can move it from one resort to another. It shouldn't defrost in the time it takes to switch resorts but you can get a cooler and ice if you're worried.
