I booked an 8:00 breakfast ressie at 1900 PF on our Animal Kingdom day (it will be a Wednesday--non EMH). I'm assuming the bfast will take a little over an hour, and after driving(our own vehicle) from GF and parking at AK, we could expect to be in the park around 9:30 or 10:00.

My question is, do you think arriving at AK this late after rope drop would put us at a huge disadvantage, i.e. longer waits? We are planning on fastpassing the safari, EE, and Kali River Rapids. Do any of the other attractions tend to get very busy on a normal basis?

well - firstly have a look at the time of you are going and at a crowd calendar. You have stated when you are going and if it is a busy time of the year. Also - are you staying on site? you could FP+ some of your rides in advance.
the other option would be to do the Tusker House buffet breakfast - then you will be inside the park and coming out just as the park opens and ready to go first thing!

We will be there from May 31-June 6 (AK day is 6/4). I thought about doing the Tusker House bfast, but we are already doing a Mickey and friends dinner earlier that week, and my daughter wants to meet Alice and Pooh.

We are staying on-site, so I will be able to fast pass in advance.

Personally, I think you will be OK, IF you get FP's for those 3 and IF you are OK with riding them only one time.
Our last trip was on a hot day with similar crowds to what I would expect that day. We arrived at Rope Drop and after a brief stop at first aid, we got to the Safari around 9:15 and rode stand by. We were then able to do everything else in the park that we wanted without any real waits and we used FP- for Everest and Kali River Rapids.
The only really long line we saw (other than the 3 you mentioned) was the one to meet Goofy and Pluto in Dinoland. We easily met them at MK.
I have heard that Mickey and Minnie can get a line now that they are in a new location, but they are easy to find elsewhere. You may want to think about meeting them when you arrive or head straight to Dinoland if Dinosaur and/ or Primeval Whirl are on your list.

If you go to the easywdw.com cheat sheets, Josh has info. on which attractions get busy quickly. I have found them very helpful when planning.

Also, if you stay until AK closes you can get a lot in! The crowds thin after the parade...... But with the parade ending sometime in June I don't know how that will change things!?!

Late afternoon AK is always great, low crowd levels and many rides are under 15 minute waits...

We tend to go every year in June (typically the week after you are going)

Safari is great, but I don't think it is something that has to be done twice. It is one of the most (if not the most) popular attraction there. I would head there first and do stand by or make sure I have it as one of my FP+.

EE can also get really busy and would suggest that as one of the FP+ as well, though if you are willing to hit up the single rider line you could get in multiple rides.

Rapids can be busy or not, but I have been plenty of times in June and have had under 30 minutes in the middle of the day.

Dinosaur is the same way.

Primeval Whirl can get busy, but most of the time it is under 30 minutes.

The Nemo Shows gets crowded, but I have only done it once and it wasn't too bad. The Auditorium holds a lot of people.

Bugs life almost never has any wait.
