Happy Tuesday everyone,

well its pouring rain today and cold too:sad2: The dogs didnt even want to go outside this morning.

If I can manage to get myself motivated this morning I would love to make some peanut butter cookies today but I just dont have any energy since this whole episode with my mom started. But I will give it a try. At least it will help keep the place warm if i bake some today. My little oven cooks 4 cookies at a time so it takes for ever to bake anything like that. I usually make a small batch of about 16 cookies or I would be at it all day long.:lmao:

My Blazer team has lost 3 games out of 4 now in the championship games. Tonight is a home game but I am afraid it may be their last! It is the best 4 out of 7 for the series, so its do or die tonight. But I cant see them winning 3 in a row from Houston Rockets. At least they made it to the Championships this year. It is a young team and this is their first experience in a playoff situation like this,so it is a learning experience for them.


Thats about it from a rain soaked RV park in Oregon today, BORING!!!;)

That sounds like an awesome trip!
We will be going to Barcelona on our cruise in 2010. Please tell me what you do there. Jeff will also be there before us, so I want all the tips from both of you on what its like. We will only have 2 to 3 hours to explore Barcelona so I want to make the most of our time. I apprecaite all the tips i can get.:thumbsup2

We will be touring Gaudi buildings including the chruch. The is the main reason I want to go to Barcelona. His work is amazing.

We had thought about doing that too but not sure how far from the port the church is? We wont have alot of time so cant go too far from the port area.
I have seen his work on TV before and wanted to go there too.

Wow, where is everyone!?!

Just the same stuff going on around here! Sun finally coming out this morning! Baseball game tonight!

Only a couple more days until the park schedule comes out for August! Just enough time to get that organized before we can call for ADR's on the 21st!

Hi Dawn,
I am here but been busy lately. Glad to hear the boys are busy with sports again this year. It will keep you all busy. I hope we hear from Denise soon. Hope all is well with her DD?

Cold and wet here again today. Tomorrow will be better then back to rain again.
Going to make a pepperoni pizza for dinner tonight, then leftover stew tomorrow adn take out on friday at moms house.

See how exciting it is around here. All I can chat about is bad weather and dinner:lmao:

Work is slow which kind of stinks as it makes the day go sooooo slowly. And when I get bored, I eat. Not good for the diet. :rolleyes1
And those peanut butter cookies sound wonderful. I could anything with peanut butter. :cloud9: :lmao:

nice to hear from you.

Only 4 ingredients to my cookies, mix in 5 minutes and then bake. Nice and easy. Not too fattening compared to normal PB cookies,

1 cup no sugar added peanut butter (no trans fat)
1 cup sugar substitute
1 egg or equivelant of 1 egg with egg beaters
1 tsp baking soda

so with the egg sub, sugar sub and healthier Peanut butter it si actually considered a healthy cookie.

My DH is diabetic so all my baking is as low of calorie, fat and cholesterol as possbile for him. Not sure on the calories, I have the numbers but they are packed away right now. I just know the receipe.

Sorry about that but if you want a healthier cookie, try them sometime.

Another cold rainy day here in Idaho. I guess I shouldn't complain though...my job as water master will be a piece of cake this year. :lmao:

I hope this swine flu doesn't spread. Janel and I are suppose to fly out to Aruba in 4 weeks....might have to postpone it until July or later if this thing doesn't clear up? :sad2:

4 weeks might be kinda soon. I know some crusie lines have changed their stops now. Disney hasnt but others have. Airplanes and cruise ships are the worst places to catch these viruses.
I would say 3 months would be safer. That gives time for the first big push of cases to be done with. Flu's usually fade out after around 12 weeks after the first big break out of it.

Good luck on your decision. I guess you could wait 2 weeks to decide, kind of see what happens with it and how strict they are on air travel and such.

I can definitely eat this. :thumbsup2 I can't tolerate that much sugar and DH is diabetic. I think I actually have all those ingrediants at home. Okay, what's the oven temp and how long do I bake them? :rotfl2: Can you tell I'm itching for peanut butter??
 
Talked to Denise. She said that she did post to the Facebook. But anyways, Isabella was born Monday, April 27th. She was induced. 8 days late. Weighs 7# 11 oz and 21 inches long. She is still in the hospital. Has IV for infection. Testing to see if it is viral, she can go home today. If it is bacterial, she has to stay longer with the IV. Mom is great and in no pain. 22 hours of labor but popped her out in the end. :lovestruc

that is great news about the grandbaby. I dont go to facebook often so missed it some how? My first labor was about the same length of time as hers an I was 13 days late. She has my sympathy for that!!!

350 degrees for 8 to 10 minutes on a greased cookie sheet.
Do not over cook. They will appear to be underdone when they are done.




Thes cookies are kinda strange to cook.
They poof up while cooking and go flat like a pancake after they come out of the oven.
They stay chewy and are yummy. If they get hard, put a slice of bread or apple with them in a zip lock bag over night and they will soften up again.
It depnds on the humidity when you cook them, probably because there is no flour,

Let them sit for close to 2 minutes before removing from the cookie sheet or they will fall apart, wait too long and they will harden too much and then you must do the above step after cooling to softening them.

My advice, cook just one cookie a couple of times and experiment with them for time. That is what I did but now can tell by just looking if they are done ok. They are worth the extra time to learn to cook them.

Now its 5 minutes and i can cook them. fast & easy. They are my families favorite cookie.

I hope you like them. I have been working for 5 years to re vamp all our favorite receipes so my DH can eat them without worries. most of my receipes are packed right now but I have tons i can share if there is something you would like to try.

The hardest one was chocolate fudge, most just didnt taste good to him, but now I finally have a good way to make it. Now to tackle divinity. Thinking of holidays of course not everyday snacks.

I dont use splenda or equal for baking although they work for peanut butter cookeis but for most baking they loose sweetness and change the texture too much. I buy Natures Sweet sugar substitute on line. It is very spendy but since I dont use it very often it is ok.
It is one of the sweeteners many manufacturers of sugar free cookies and cakes use because it works the closest to sugar. You can even make taffy and hard candies with it, it wont burn like the others do.

well the sun finally came out tonight, so Greg is walking the pups. then I think we will watch a movie. I havnt seen Marley & Me and I have it here, so we may watch that tonight.
