What a wonderful trip you have planned! I'm sure you'll have an amazing time. You really can't beat the convenience of the Grand Californian, and how great to have a theme park view room.
Did you actually manage to book a waterside table at Blue Bayou? We've never been able to explicitly book our table on the waterside, but if you arrive really early it's not normally a problem if you're willing to wait for one to open up (...do -- it's so worth it!). Definitely schedule some DTD time, we love the California DTD, it's much more compact that at WDW and there are some really unique shops. La Brea Bakery is great for breakfast if you want a change from the hotel.
You probably know this already, but you mentioned visiting the Disney Studios in Burbank. It's nice to go see the outside and the various statues they have, but you can't (unfortunately) go in and have a look round.
In Las Vegas, you've made excellent choices with 'O' and 'Ka' -- in my opinion 'O' is the absolute best Cirque Du Soleil show out there, and 'Ka' is awesome too, although it's very different from all the other Cirque shows.
