We saw it from our Beach Club Villa balcony but unless you have a room, you probably cannot get a view.
 
We sometimes watch the high fireworks from the bench on the boat dock outside the Yacht Club if we don't want to walk into Epcot to view them, or grab a lounger on the beach in front of the Beach Club. We did this a few times on our last trip, it was convenient for us to do this though as we stay at the Beach Club Villas.
 
There's a bridge that links the Swan/Dolphin with the Boardwalk where we've often caught the aerials for Illuminations and because the middle part is higher than the BW, you can hear pretty well, too.

I've seen bunches of people watching from there! Also from the bridge to BW just past the Intl Gateway. I would imagine that the S/D bridge might be better though.
 
Most of the show is below the treeline, even from the bridge, but you can still see many of the higher fireworks towards the very beginning and very end of the show. (The middle might get a little tedious -- bring a drink! :))
 
I could see the high fireworks and hear the music from Illuminations from the 2nd floor of Jamaica bldg 46 at CBR.

Let me try it a slightly different way.

Can you see Wishes outside MK?
Yes.
Except for a few castle projection-effects (and sometimes Tinkerbell) the "entire show" is FIREWORKS and most are launched high enough to see very well across the lake.

Can you see a few of the higher-launched fireworks FROM IllumiNations?
Yes.
BUT, IllumiNations is only "partially" a fireworks presenation, and many of the exposions and sparkle effects are very LOW to the water (some ON the water).
Much more of the show is seen in the water fountains, lasers, lighting effects ON the buildings around the lagoon, the "inferno barge" and the "Video Globe."
So little of the show is "high in the air" that its almost meaningless to see just those effects.

So, can you see ILLUMINATIONS (the "show") outside Epcot?
Nope.

And the same goes DOUBLE at the Studios for Fantasmic!
 
You can see the in air fireworks from MK, but part of the show is done on the lagoon that part you will not be able to see
 
One of the 2 bridges out on the Boardwalk have good views of the higher effects. And you can usually hear the music, unless the wind is blowing in the opposite direction. It's a great spot, not a lot of people usually are there.
