We chose main dining JUST to be sure not to be over-stuffed before the pirate night buffet! 
For the kids club activities, you can look at recent Navigators to get an idea of the scheduled activities. Navigators are the paper brought around each day listing the activities for the next day. You can sometimes find them posted on the DCL forum, or you can go to the main forum and look under the FAQ section at the top. The Navigators do change some with every cruise, but it will give you a general idea of what to expect.
One activity I have been told not to miss is the kids club graduation on the last night. Could change, but I was told they sing a few songs and walk across the stage in cap and gown. They get to keep the cap (with ears, of course!) and they get a T-shirt.
For your late dining... I think that really depends on the kids. If you are not able to change your time, you could always get them a snack around 5ish to hold them over. Maybe some fruit from Topsiders? They have many Disney kids channels to choose from in your stateroom, too. For my kids, I would be able to give them a snack and let them lay on the bed and watch TV, and they would get their second wind. (Please note this is our first cruise, so my advice hasn't been tested... just how we normally handle vacations!)
