The What's For Dinner Thread - May '09(recipe index in OP)

I'd be happy just to use the CS credits for one snack at the booths! I know that we couldn't count on that. I'm sure some CMs are good about it, but sometimes the F&W CMs have trouble with the computers, so that would probably be asking too much.

Yes you can but I am not sure if you could use them at F&W though. If I remember correctly they are two snacks for one CS.

Dinner tonight may be salmon, I had Cheesecake Factory for lunch. I am stuffed and I have a piece of Pineapple Upside Down Cheesecake sitting here staring at me.
 
Nancy- I will let you know how the cleaning goes for us. I think my DM has BGE Home come out and do it. We are having both the house vents and dryer vent done. It started out we were just having the dryer done and I figured we should probably have the whole house done.

We have had a birds nest in the outside vent for the dryer every Spring for as long as I can remember and my DM just noticed it this past weekend. :rotfl: The dryer is not dryer very well and she is thinking that is the cause, I'm thinking there is a new dryer in my future.

I was thinking about you yesterday and hoping everything went well.Glad to see you made it thru the day. That must have been a very emotional day for you and Greg.Try to rest today.

How is Lily doing?? My Maxie is doing better so far he is healing from his scratch, but he is still probably going to have to get cateract out.We will see, I want him to fully recover before they do anything.

You have your cruise coming up you must be so excited about that.
I know I am I leave for Disney in 11 days.:cool1:

I am still pooped from yesterday.
Lily is still taking medicine for an ear infection so we have to wait for the eye doctor visit. The vet will schedule the appt. when I take her for a recheck when I come back from the cruise.
Poor Maxie....I agree about letting him recover before any kind of procedure.

I don't think I ever updated when you asked about my friend Sharon's Dad. He is scheduled for quadruple bypass Friday morning.

I just received a text & Emily is 1 of the 7 kids they are still auditioning.

Pineapple Upside Down Cheesecake.....yummy

Crust

  • 1 1/3 cups graham cracker crumbs
  • 1/2 stick butter
  • 1 tablespoon cocoa
Cheesecake filling:


  • 6 ounces bittersweet or semisweet chocolate, chopped small
  • 2 1/2 cups cream cheese
  • 3/4 cup superfine sugar
  • 1 tablespoon custard powder
  • 3 large eggs
  • 3 large egg yolks
  • 2/3 cup sour cream
  • 1/2 teaspoon cocoa, dissolved in 1 tablespoon hot water
Sauce:


  • 3 ounces bittersweet chocolate, finely chopped
  • 1/2 cup heavy cream
  • 1 teaspoon dark corn syrup
  • Special equipment: 9-inch springform pan
Directions

Preheat the oven to 350 degrees F.
To make the base, process the graham crackers to make rough crumbs and then add the butter and cocoa. Process again until it makes damp, clumping crumbs and then tip them into the pan. Press the crumbs into the bottom of the pan to make an even base and put into the freezer while you make the filling.
Put a kettle on to boil.
Melt the chocolate either in a microwave or double boiler, and set aside to cool slightly.
Beat the cream cheese to soften it, then add the sugar and custard power, beating again to combine. Beat in the whole eggs and then the yolks, and the sour cream. Finally add the cocoa dissolved in hot water and melted chocolate and mix to a smooth batter.
Take the springform tin out of the freezer and line the outside of the tin with a good layer of cling wrap, and then another layer of strong foil over that. This will protect it from the water bath.
Sit the springform tin in a roasting pan and pour in the cheesecake filling. Fill the roasting pan with just boiled water to come about half way up the cake tin and bake in the oven for 45 minutes to 1 hour. The top of the cheesecake should be set, but the underneath should still have a wobble to it.
Peel away the foil and cling film wrapping and sit the cheesecake in its tin on a rack to cool. Put in the refrigerator once it is no longer hot, and leave to set, covered with plastic overnight. Let it lose its chill before unspringing the cheesecake to serve.
To make the chocolate sauce: very gently melt the chopped chocolate, cream and syrup. When the chocolate has nearly melted, take off the heat and whisk it to a smooth sauce. Let it cool a little, and pour it over the chocolate cheesecake on its serving plate.

I don't think we'll be doing much more than cruising the booths, the wine walk and maybe a seminar. I'm more excited about the plans we all have for dinners & cocktails!!!:cool1:

You all need to have another glass for me too. I second that quote Janice wanted to go but can't justify just starting back to work only to take a week off don't think my boss would appreciate that nor my kids.

I did and it was very good, I ate it all afternoon! :cloud9:I would have a bite or two then a little while later have another. I think the whipped cream on the cheesecake itself, there was some on the side too, was pinepple flavored.
