Eat at Home 3!

It's June! So here is my June meal list for those who are interested. I'm trying to eat more vegetarian meals, mostly for cost reasons since locally sourced meat is a bit expensive. Right now the aim is to have the majority of my lunches vegetarian and then 2-3 nights of vegetarian dinners (anyone have any good vegetarian food blogs?). The first couple of weeks won't be following that due to already buying this weeks groceries and my work schedule for next week.

Monday (Today): Shrimp Pad Thai
Tuesday: Honey fried chicken, corn bread, and green beans
Wednesday: Vegetarian Pizza
Thursday: Leftovers
Friday: Ground beef tacos, pinto beans (mixed with onion, garlic, avocado, corn and topped with sour cream
Saturday: Smothered pork chops with mushrooms, roasted brussels sprouts, and pasta with butter and parm
Sunday: Peanut crusted fish, rice, broccoli

Monday: Chicken and vegetable curry, rice
Tuesday: French toast with scrambled eggs
Wednesday: Meatloaf, mashed potatoes and gravy, glazed carots
Thursday: Leftovers
Friday: Leftovers
Saturday: Vegetable fried rice
Sunday: Crab stuffed tilapia, roasted asparagus

Monday: Falafel, cucumber sauce, pita bread, roasted eggplant
Tuesday: Sesame soy meatballs, rice, stir fried broccoli and bell pepper
Wednesday: Leftovers
Thursday: Pasta with egg, cheese, and peas
Friday: Chicken fried steak, mashed potatoes, and green beans
Saturday: Leftovers
Sunday: Caramelized onion, spinach, and avocado quesadillas, pinto beans

Monday: Asian salmon with noodles
Tuesday: Risotto with cheese and mushrooms
Wednesday: Roasted turkey, green bean casseroles, mashed sweet potato casseroles, stuffing, oyster dressing, rolls, and gravy
Thursday: Leftovers
Friday: Hot turkey sandwiches
Saturday: Two potato hash with eggs
Sunday: Ground beef enchiladas with red pepper sauce

We're Pescatarians (mostly veggie with a little fish or seafood) and I find that Pinterest is my best bet for creative, healthy, tasty recipes! Do you have a Pinterest!? :D

We just did our meal plan for the week, as we may be out of town next week but it is up in the air for now.
Monday: Veggie lasagna, bread, arugula salad ~I need leftover veggie bits to roast for stock. lol
Tuesday: Artichokes (they were on sale) w/ butter ,with greek panzanella salad (made w/ leftover bread)
Wednesday: sweet potato & black bean flautas *never made these*, w/ lettuce, tomatoes, black olives, guacamole, and cheese
Thursday: eggplant schnitzel, braised red cabbage, and spaetzle
Friday: Vegetarian Drunken noodles w/ tofu (pad kee mao), and coconut sticky rice w/ mango
Saturday: homemade flat bread pizza with veggies and cheese, and arugula salad
Sunday: may be leaving

Hope some of them are helpful to you! I really do use Pinterest for food, art, and Disney lol. This board has two recipes for eggplant cutlets and eggplant schnitzel... https://www.pinterest.com/ms_rebecca/foodie-pescatarian-life/ We're trying to branch out and learn to cook new cuisines, whilst on a budget so I'm looking for more boards and recipes. :D

Meal plan for this week..
Sunday was...Spaghetti and meatballs, Italian bread, salad
Monday... Hot dogs and sliced cucumbers
Tuesday... Breakfast for dinner (eggs, toast , fruit)
Wednesday... Veggie burgers, beef burgers, sweet potato fries, carrots
Thursday...Pork Schnitzel , Broccoli Cheese Rice, salad
Friday...Beef Stew
Saturday...Wraps (cheese, veggies, seasoned beef, beans)
 
So far we've made some changes to our dinner plans.
Monday: Veggie lasagna, bread ~I skipped the salad and did not make veggie stock :oops:

I almost always change them. I basically make the plan to make sure I have everything onhand to make a weeks worth of dinners. However, we often have a sports practice or a play date we don't feel like eating something and it changes our plans. We usually stick to the menu but we switch the days around all the time. :)

Oh good, so happy to not be alone :hyper2: in this! I find the changes as interesting as the plans if that makes sense. :D

The pizza was yummy. Super thin crust, garlic and olive oil base, summer squash, mushrooms, onions, mozzarella, provolone, and ricotta. I ate like 3/4 of the dang thing, but that's okay since I was out all day at the zoo with my niece.

I haven't posted for a couple of weeks! Here is what the next week and a half is going to look like around here...

Thursday (tonight): It'll probably be dinner at Whole Foods or Costco while we're grocery shopping.
Friday: Thai-Style Crispy Tofu Sauteed with Veggies over Brown Rice Noodles, sesame ginger garlic green beans
Saturday: "pulled" jackfruit bbq sandwiches, dijon roasted cabbage
Sunday: za'atar tofu, tomatoes & roasted garlic saute w/ persian rice & steamed breen beans
Monday: veggie sausage, potato, greens soup w/ bread
Tuesday: tofu prepared similar to a fried fish, crabby jackfruit balls, tartar sauce, chickpea caesar salad
Wednesday: chorizo & potato tacos, pico de gallo, and guacamole
Thursday: quinoa & mushroom saute, healthified green bean casserole
Friday: roasted portobello mushrooms, mashed potatoes w/ gravy and steamed broccoli
Saturday: tofu & corn lettuce wraps, avocado, cumin lime roasted carrots
Sunday: Vietnamese crepes

breakfast, lunches, snacks:
banana french toast, grilled roasted red pepper cheese sandwich, cinnamon roll smoothie, texas caviar, indian yellow split pea soup, ice cream, indian black eyed pea soup, breakfast chickpea patties, chia pudding, lentil muffins, coconut flour instant porridge, pb chocolate quinoa parfaits, stuffed baked apples, coconut milk & fruit popsicles, and some dog food/treats.

This menu plan will more than likely be stretched to about 2 weeks with some leftovers for dinner or busy nights where I have my husband bring us home some dinner from work. I just never know how much my family will eat so some weeks we have no leftovers at all and other weeks there's a ton! I might also just make some simple beans and rice a couple of times depending on how things go. I'm going to the store tonight and I'd honestly like to try not to go grocery shopping again for the rest of this month! Maybe just grab a few fresh things from the local market in a couple of weeks. We can have a lot of fresh stuff for the first half of the month and then tap into our frozen fruits/veggies the last half of the month. $300 is my grocery budget goal for our family this month.

Well, no cooking for today as I am not going to work tonight. I got some really bad news this morning. My best friend has been diagnosed with stage 4 cervical cancer. I've been in tears all day since I found out and just can't handle trying to deal with patrons at work. I also just don't have the energy to cook so I ordered in a bunch of mexican food.

Mmm sounds good! I can't have onion or garlic *sniff* but the rest sounds delish!

Oh my goodness Lily I'm so very sorry to hear that. Do you have someone to talk to about it? My mom was stage 4 when we found out about her cancer too so if you need an ear please let me know. Sending warm thoughts to her and to you as well. ~Rebecca

Thanks hun. I actually lost my mom just over 2 years ago to stage 4 lung cancer so needless to say this has hit me very hard. She is going to fight as much as she can and she is a very strong woman so we will see. The doctor is saying three years. I may take you up on talking to you once the shock begins to wear off.

As for menu plans, mine for this week and next week have already changed. Tomorrow night with be the smothered pork chops instead of tacos since I ordered mexican in today. Then next week I am changing from the chicken curry to a vegetarian coconut curry with coconut rice.

Okay... that is actually a bit freaky. My mom passed on May 18 two years ago. It was exactly 1 week after I graduated with my Masters.

I've been searching a lot for recipes and am starting to build up a good selection. I'll PM you my name for Pinterest if that is okay. I also got 3 really good vegetarian cookbooks the other day at Half Price Books. So I'm getting there! I will still only be a "part time" vegetarian lol. I still enjoy my meat too much to go 100%, but I am finding it easy to go vegetarian at least 3 nights a week. Though I am worried about getting a vegetable stock I can actually have since I can't have tomatoes.
