Eat at Home 3!

I usually read what you are all eating but very rarely post. So here goes!

Sunday - we had - Mom's Day Brunch leftovers - ham slices, fried potatoes and beets.
Monday - we had - Salmon, leftover veggie pasta sauce with elbow macaroni, broccoli,
Tuesday - chicken tenders, oriental stir fry and rice,
Wednesday - Taco Salad
Thursday - Naan Pizzas - Naan, tomatoe sauce, cheese, pepperoni, onions, green pepper, mushrooms, banana peppers - everybody makes their own
Friday - Corn Dog Casserole with some type of veggie
Saturday - guys are on a whirlwind trip to Florida to drop son off at internship, I am "camping" with my girlfriend - to be determine
Sunday - Fish, pesto pasta, veggie
 
Been awhile since I posted, but need to get back to the meal plannin g( i think i've said this before!!)

Saturday - Unknown - we will be at a lacross game in NE
Sunday - Meatloaf with Mashed Potatoes or Baked Sweet Potatoes
Monday - Chicken Enchaladas
Tuesday - Shreaded BBQ Chicken w/veggie
Wednesday - Creamed Pork Chops
Thursday - Balsamic Shreaded Beef
Friday - **Eat Out - Grocery Shopping**
Saturday - Buffalo Spicy Shreaded Chicken
Sunday - Beef & Broccoli Stir Fry over brown rice

Past that - no ding dang clue

What is Balsamic Shredded Beef? That sounds like something my husband would love!
 
Alright... here is the menu for the rest of the month. Lunches will be the normal: salad, wraps, leftovers, omelets, and frozen meals. I've also decided to make something sweet every week instead of buying something at the store. Next week it will be chocolate chip cookies using white chocolate (I can't have regular chocolate).

Last night: Baked chicken chimichangas, avocado and sour cream sauce, and refried beans with cheese
Wednesday: Asian chicken salad
Thursday: Italian Beef sandwiches, corn on the cob, and fruit
Friday: Leftovers
Saturday: Leftovers
Sunday: Italian Beef nachos
Monday: Honey soy chicken, rice, and broccoli
Tuesday: Leftovers
Wednesday: Chicken pasta with roasted red pepper sauce
Thursday: Leftovers
Friday: Homemade waffles and bacon
Saturday: Asian chicken wings, stuffed mushrooms, and twice baked potatoes
Sunday: Leftovers
Monday: Hamburgers, corn on the cob, and fried potatoes and onions
Tuesday: Vegetarian lasagna
Wednesday: Leftovers
Thursday: Leftovers
Friday: Summer vegetables with sausage and potatoes
Saturday: Leftovers

Once I get my June work schedule, I will work on my monthly plan for next month. I think I will only make recipes from either my cookbooks or cooking magazines instead of my HUGE pinterest collection lol.
 


I bought this book: http://www.amazon.com/gp/product/0800733177/ref=oh_aui_detailpage_o02_s00?ie=UTF8&psc=1 several months ago, and since I had to take a 5 day stretch off of work this week while my husband is at a conference, I decided to try cooking double of several recipes this morning to freeze.
-I made a teriyaki chicken and veggie stir-fry which is mostly cooked, would just need rice or stir-fry noodles and to be reheated in a wok or frying pan (3 meals)
-I prepared the meat for grilled maui chicken sandwiches, which is basically just the raw meat in a marinade, on the day we eat it, the chicken would get grilled and you would make a sandwich with the chicken, fresh pineapple, lettuce tomato and mayo (3 meals)
-I prepared the meat for grilled coconut lime chicken tenders, which is also a marinade for the chicken and then on the day you eat it you would grill the meat and serve it with a peanut sauce (3 meals)
-I made homemade meatballs and divided it up among 4 Ziploc bags (4 meals)
-I also made a batch of marinara sauce to go with 1 of the bags of meat balls, and a smaller bag of marinara to go with these eggplant rollatinis I bought from Market Day

Preparing these meals and clean up time all together was 5 1/2 hours.

I also already have a tray of lasagna I put into the freezer the last time I made lasagna.
 


Starting to work on my June meal plan! Doing a month at a time can be a bit difficult, but I find it really helps with the budget and keeps me on track better overall.

The one thing I need to do better about, at least on a week to week basis, is planning my lunches. Not really a day by day sort of thing, but to make sure I have plenty of stuff on hand to make decent and healthy lunches.

Tuesday - grilled chicken, zucchini, rice
Wednesday - burgers, sliced tomatoes, avocados, pasta salad
Thursday - meat loaf, mashed potatoes, peas
Friday - pizza/ salad
 
Monday - sloppy joes, tater tots
Tuesday - portabella mushroom pizzas, salads with grilled chicken
Wednesday - kielbasa, perogis
Thursday - sweet and sour chicken, rice and broccoli
Friday - dinner out
Saturday - dinner out
Sunday - London broil, smashed potatoes, grilled veggies
 
Another week. It was a long weekend here and we were at the cottage, so I will just start from today.

Tuesday.. just ds and I. Chicken fingers, cucumbers and dip
Wednesday... Basketball night.. breakfast for dinner
Thursday.. Shepard's Pie
Friday.. Crockpot BBQ chicken, broccoli, baked potato and sweet potato
Saturday.. Homemade Pizzas
Sunday..Either dinner at my parents or pork schnitzel and rice and carrots
 
Been a while since I've stopped by. We have been doing good about eating at home despite my insane work hours. We have only eaten out for dinner once in the past 10 days.

Last night we had a small get together and had steaks, twice baked potatoes, roasted Brussel sprouts, corn, garlic bread, watermelon, and ice cream sundaes.

Tonight will be bratwurst with German potato salad, leftover Brussel sprouts, and watermelon. Plus strawberry shortcakes for dessert.
 
A little late with this weeks menu...

Sunday was turkey breast, mashed potatoes, roast carrots and peas at my mum's

Monday... Chicken and Veggie Burgers, roasted red peppers, cucumber slices, baked potatoes

Tuesday.. Breakfast for dinner and fruit smoothies

Wednesday... BBQ chicken thighs, couscous with veggies, and corn

Thursday... Spaghetti and garlic bread

Friday.. Chili

Saturday.. I'm away at a baby shower so Dh and the kids will fend for themselves

Sunday..Dinner at my inlaws
