Sorry to hear that. =( Hoping that May picks up for you! Just remember, when all else fails, you can make some delicious combinations of rice/beans/lentils/frozen veggies for cheap.

Oh man, I've been struggling with this one for a while. Just based on MFP, I'm usually on/over my vit A/C, iron and calcium targets. Potassium, though? Don't get me started. I'm pretty sure those levels are always low despite my efforts. When they get really bad, I'll sometimes wake up to excruciatingly bad charlie horses in the middle of the night. I keep a container of potassium tablets next to my bed for when that happens because eating a banana in the middle of the night with a mouthguard in- recipe for disaster.
I wasn't aware that MFP can give you feedback on that. I might have to look into it. When my DD gets leg cramps and such I always remind her to eat a banana at her next meal, but she doesn't really like them. But I laughed at the mental picture of you trying to eat a banana at midnight while wearing your mouthguard!
I sometimes will take a vitamin D tablet when I feel blue, I find it perks me up a bit in the winter especially.
Multivitamins are reserved for days where my eating falls apart and there's no hope.

Doing well Monday-Thursday is great! Honestly, when I used to weigh myself once weekly it I'd usually do it Friday. I'm pretty good at eating clean during the week, but then blow it on the weekends. By weighing on Friday, you've got a whole week to lose any water retention you may have gained over the weekend (for me, one night of bad eating can equal a gain of about 5lbs overnight. Clearly not real weight, you just have to let your body get it all out). A nice accurate measure is to actually weigh every day and look at the average for the week. Helps with day-to-day fluctuations.
Some of us (myself included) just cannot handle the mental mind game of daily weigh-ins. You are absolutely RIGHT.... looking at the average for the week or the overall trend is good.... but I know it plays with my mind to see that I am up after a day or two of great eating and exercise. I think we ALL need to learn what works BEST for us regarding the scale and then STICK WITH IT!
I'm also a vegetarian, but I've never had problems with low iron or B12. I've never figured out why that is, considering how my diet used to be they should have been down the toilet. It's definitely good that you're keeping on top of it, though!

Meal prep Sunday!
Black bean meatballs in tomato sauce, stuffed pasta shells, fruits and veggies and chocolate banana proats! My poor hardboiled eggs didn't get fully cooked somehow so those are out as a snack. I also made bread a little later (was craving it so bad and didn't feel like walking to the store- clearly making it is the easier option?) that I baked in a muffin tin for portion control. Please ignore the empty wine bottles top right.
I didn't have the greatest weekend health wise (but it was fun!), went out with friends, aggravated my foot problems, felt generally awful after said night out. The foot part scared me away from the gym for a few days, but I went to see my trainer today and he forced me to stop whining and get to work. Also had a few tricks up his sleeve to stretch out the faschia in my calf, which alleviated a ton of the pain. I may pay him way too much money but I don't know what I'd do without him.
