I just wanted to pop in and wish all of you a Happy and safe Thanksgiving Holiday! I doubt that I wil be back on as we leave early tomorrow morning. I know that there is WIFI in the parks so I hope to check in.

Now I start, the tradition of making everything else out of the turkey left overs... First up Turkey Pot Pie!
....last night, I made meatballs with pasta....however, to continue to strive to make it just a little more healthy, besides STEAMING the meatballs rather than frying them in oil, I decided use a meat mixture of half 90% beef/half ground chicken breast. They were actually very tasty, simmered on a very low flame in the sauce for over an hour....

.....try it out the next time you make meatballs. They were tasty. I used GF bread crumbs and lo-fat grated parm cheese.....
