First days of school are always so exciting. I am sorry Nancy, are you a teacher or are you taking classes?



WFD (now last night) :blush: We ordered in Chinese. Just didn't have it in me to cook tonight. We have very dear friends who are fighting cancer. We are there most days trying to help his wife care for him while she tries to work.

Is it just me or do more people seem to be getting cancer? We have family friends in San Diego who are fighting it, two of my DH's family members have died in the last year from it and they were both 48 years old. Then today I got an e-mail from my best friend who lives in North Carolina, she was my maid-of-honor, and we were college roommates. She was just diagnosed with bi-lateral ovarian cancer stage 2. None of these people are over that age of 56. All of them take care of themselves, get their yearly exams, and have no elevated life style risks.

Sorry guys...I really don't want to be a downer on this wonderful thread.

Off to better things. Tonight for dinner I am going to make crab salad served in our fresh tomatoes. Think I will throw some makings in the bread maker to go with it.

Ann, i think in years past they called what people dies from different things, and more and more it seems they are lumped under the term cancer now?

That being said, yes I think more and more people are getting forms of it more often.

Almost every member of my family in the generations older than me have had, are fighting it, or have died from it.
 
....oh, yes ma'am....lettuce (our latest is mesclun salad), 'maters, green beans, zucchini, peppers (I've got some poblanos that are ready for pickin' today, so I'm gonna use them to make Angry Mussels!), rosemary, basil, 'cukes (two kinds).....I'll take some pix and post them!

Nancy - Good for you; heading back to school to finish your degree. It is a lot of hard work to coordinate normal life with study. Kudos to you.

Ellen - Did your football team win?? I hope so.


Ann - The Big C is much more common over here than ever before. :sad1: I don't know whether it's our lifestyles, what we eat or the fact that we keep living for longer that is increasing the risk. May we all be happy and healthy!

Well 2 days and counting till College Football and my beloved Cornhuskers. GO BIG RED!!! I can't wait. Stephanie and I are going to hit the Farmers Market down in the Hay Market on Saturday morning. The game is at 2:30 so we will have plenty of time.

I think I need to make cookies this weekend!

You feel about your Football like we feel about our lady Huskies! Deb went to Central so I felt a little guilty.

:hug: I think that you are right. Our eye Dr is from Korea adn she told me there are signs everywhere stating "No USA beef" "No USA soybeans" "No USA wheat"

She thinks that the hybridized seed may have something to do with this. All of Buddy's father's side with the exception of two people battled cancer. it was terrible!

Dinner is roast beef sandwiches and chips. Buddy said he had a lot ............I mean a lot.............of pizza for lunch at work so he is not hungry. He loves the store roasted beef at my favorite store so I picked some up with fresh rolls.
 
Angry Mussels with Smoked Bacon​



Ingredients

2 pounds mussels
¼ of a red onion (chopped) [1 or 2 slices]
3 oz. good smoked bacon (diced)
3 cloves fresh garlic (chopped)
1 or 2 poblano peppers (sliced)
1/2 cup dry white wine
1 teaspoon sea salt
1 stick of butter [cut into 4 or 5 pieces]
1 T. chopped parsley




Using a large skillet, render bacon until it begins to crisp (medium-high heat). Add the garlic, onion and poblano. Cook for 2 to 4 minutes, and add the cleaned mussels. Stir occasionally, until they start to open. Lower heat and deglaze with the wine, and cook until the wine is almost dry, keeping mussels covered. Add the butter, and keep stirring until the butter is completely melted and take off of the heat. Season with kosher salt, and finish with freshly cut parsley. Serve with crusty garlic bread for dipping!!
