The What's for Dinner Thread- June 2012 (recipe index in OP)

...The funeral is tomorrow morning, with a potluck lunch afterwards. I'm making potato salad for that, and something for a dessert. We'll be grilling meat, so I need to get to the store and see what looks good. It will be hot dogs for the kids, I do know that much, but I won't eat hot dogs, so I need to find something else....

Morning, all. Things here are good!

We had a gorgeous evening last night. So clear and beautiful! Alan got home from school early, so we all spent some time outside, doing yard work. It's not my favorite thing to do, but it was fun to work as a family.

Tonight Jacob has Scouts and Katie has a rehearsal and then her youth group activity. So, I've got to come up with something quick and easy. I'm thinking cowboy quesadillas. The kids love them, and they are fast!

Hey, all! Sorry I've been MIA this past week; I've been crazy busy. Today we had dinner at my mom's house. It was a birthday dinner (b-day is Wednesday). We had hamburgers, coleslaw, and baked beans.

Weight loss is still going awesome! I went shopping the other day and I am down THREE jean sizes!!! I'm not kidding, I literally cried on my mother's shoulder when the jeans fit. One of my goals, done!

Lindsay congradulations on the weight loss. Three jean sizes is fantastic. And thank you for the welcome.

But.......you don't like my kind of kangaroo bacon. :teeth:

Ok....I was going to let this one go, but naw can't do it. Is there really kangaroo bacon? What does it taste like?

Morning, all! Scott has a Geek conference the rest of the week and is eating there the rest of the week so I'm done cooking. Yippee! Also, today is my birthday and I refuse to cook unless I want to, lol. It's going to be a busy day so I wouldn't have time anyway.

I am so sorry for your loss. He was so young, prayers for his family and yours too Glynis.

First days of school are always so exciting. I am sorry Nancy, are you a teacher or are you taking classes?



WFD (now last night) :blush: We ordered in Chinese. Just didn't have it in me to cook tonight. We have very dear friends who are fighting cancer. We are there most days trying to help his wife care for him while she tries to work.

Is it just me or do more people seem to be getting cancer? We have family friends in San Diego who are fighting it, two of my DH's family members have died in the last year from it and they were both 48 years old. Then today I got an e-mail from my best friend who lives in North Carolina, she was my maid-of-honor, and we were college roommates. She was just diagnosed with bi-lateral ovarian cancer stage 2. None of these people are over that age of 56. All of them take care of themselves, get their yearly exams, and have no elevated life style risks.

Sorry guys...I really don't want to be a downer on this wonderful thread.

Off to better things. Tonight for dinner I am going to make crab salad served in our fresh tomatoes. Think I will throw some makings in the bread maker to go with it.

Ann - There is kangaroo meat. It's a game-y tasting meat that is chewy if overcooked. So most of the time, it is served rare.

Kangaroo bacon is something that Kimmar and I spar about every so often.

Bacon in Australia is middle bacon. It includes the rasher (belly bacon) that American bacon is made of as well as the loin (back bacon) like Canadian bacon. We don't cook our bacon until crispy like the American bacon; rather it is cooked until there is a caramelisation on the meat. It tends to be tender; rather than chewy.

I believe Kimmar thinks that we have it on the raw, undercooked side and she's been calling it kangaroo bacon since the first time I posted a picture of Australian bacon.

....you don't wanna know :crazy2:.....but you get a sudden urge to BOUNCE right after you eat some!

....oh, yes ma'am....lettuce (our latest is mesclun salad), 'maters, green beans, zucchini, peppers (I've got some poblanos that are ready for pickin' today, so I'm gonna use them to make Angry Mussels!), rosemary, basil, 'cukes (two kinds).....I'll take some pix and post them!
 
Angel- I started to get my degree in Business Administration but I was not able to finish. I was working full time at a very intense job. Well then life got in the way. Marisa asked why I did nto go back and I had no answer so here I am :goodvibes

Congrats n the gardens! Our little garden did 1/2 okay. Our cucumbers were wonderful but the tomatoes had that virus that affected the tobacco in our area. It hits, potatoes, tomatoes and tobacco. My neighborhood s surrounded by potato fields. Next year we are only planting cukes and will share with Daniel. He had killer tomatoes!

I took pork chop out for dinner wand will toss them on the grill with salad and something. I am trying to catch up on the laundry that I made when I swapped out my linens. I never washed over the weekend so I have a mountain!

Well 2 days and counting till College Football and my beloved Cornhuskers. GO BIG RED!!! I can't wait. Stephanie and I are going to hit the Farmers Market down in the Hay Market on Saturday morning. The game is at 2:30 so we will have plenty of time.

WFDT ~ Me - Chicken salad, garlic bread and homemade chocolate chip cookies - I am making them for the weekend so I have to taste test. Doug will eat at the Country Club.
