The What's for Dinner Thread- June 2012 (recipe index in OP)

ok Last night I added Bacon to the grilled cheese and a slice of tomato, and had the tomato Soup...

For dessert some more of the Peach Cobbler.
i took this with my phone so it is a little hazy!

Chicken Lafayette!





Chicken Lafayette

2 boneless skinless chicken breasts, pounded thin
salt&pepper
garlic powder
cajun seasoning to taste
2 tsps. butter
4 T. olive oil [to saute' chicken]
1 cup mixed bell pepper slices and onions
1/2 pound peeled and deveined shrimp
1 cup alfredo sauce
1 cup shredded monterey jack


Season chicken and brown in oil and butter. Set aside. Saute' peppers and onions, adding shrimp the last 5 minutes.Take all veggies and shrimp out after cooked.Place chicken in a 13 x9 inch pan. Top with shrimp and veggies. Pour alfredo over the top. Sprinkle with cheese and brown in a 350 oven until cheese is bubbly. Serve with pasta (or mashed potatoes).
 
Between reading about Kimmar's dinner and looking at Brandi's dessert, I am full!

Vegetable Risotto

My starting ingredients:

  • Leeks, 2 – finely sliced
  • Carrots, 2 – diced
  • Celery, 3 stalks – sliced
  • Spinach, 3 handfuls
  • Arborio rice, about 2 cups
  • White wine, 1 cup
  • Vegetable stock, 4 cups
  • Butter, about 100 g
  • Oil, 1 tablespoon
  • Salt and Pepper to taste
  • Parmesan Cheese to taste



In a large frying pan, heat up the butter and oil.

Saute the leeks using a low flame….

…until just wilted.

Add the carrots.

…..the contents were added to the frying pan.

Turn the heat up and fry the rice for 2 – 3 minutes.

I added the celery at this stage because I like the celery a little crunchy. If you prefer it soft, add the celery with the carrots.

I know I said a cup of wine….but when I looked at the amount of wine I had in the bottle, I decided to pour it rather than measure. It looked close enough; plus or plus a few.

Continue stirring the contents until the liquid is mostly evaporated. Then add the hot stock. I heated the stock up in the microwave.

Continue stirring until the liquid has evaporated and then add a little more stock. Repeat until the rice is cooked. I do turn the heat down towards the end so that I can control the degree to which the rice gets cooked to.

I know that the recipes all say cook until the rice is al dente. In my family, we prefer that the rice is not “to the bite” but rather soft all the way through.
When the rice is approaching that point, add the spinach and stir it in.

Turn off the heat and season with salt and pepper to taste. I also add another dob of butter at this point.

You could add the parmesan cheese at this point, but DH is picky about too much cheese. So, I leave it on the table for us to dress the risotto accordingly.

Good Sunday morning!!!!!!!!!!!!!!!

It has been a few days but I'm back!

PIO- I don't like al dente rice either. Your dinner looks lovely!

Kimmar- I loved your dress! I think that the wedding was lovely as were you!

Friday night we had Kady so I figured we would get a little bite to eat after Bud's DOT physical. We are friendly with his boss and wife and they called to see if we would join them for a quick bite. You know me :cheer2::cheer2::cheer2:

I worried a bit that Kady would be uncomfortable bit no way! Jeannie drew her out so we had a lovely evening. We went to a pizza place that has been in Springfield for 50 years and then back to ther home for an evening cocktail. Kady opped in their pool and I enjoed a glass of chocolate wine. delicious!

Last night we had leftover pizza for Bud an deggs and toast for me. Buddy's cousi came over to help me paint and that was all I had the strength to have.

I have WAYYYYYYYYYYYYYYYYY too much trim in my room. There is a coffered cedar ceiling and then rough cut barn wood trim around the windows, doors and floor. It took all day to go around all that trim with primer and them prime the walls. I hope to get the room painted completely today.

One thing though............if you do not want to know the true state of your dust.............stay off of ladders!!!!!!!!!! I dust all of that wood but after seeing it up close i am shocked! I have to wash it all and washing all those trimmed out boxes over my head and I am :scared: I don't know how to post pics here but will ask Marisa to do it for me. The wood is pretty but I am not happy now!

Even cleaning the trim is a dog, i need to use my steamer in order to get the dust that settles in it out.
 
Nancy, I hope you get everything done that you want, but I hate all the cleaning and the rough wood I am sure holds on to it for dear life!!!
 


Been forever since I've checked in! School started this past Monday (8/20), and its already crazy! Tons of reading and studying will be my life for the next 3 years.

Dinners have been super skimpy. I don't have time anymore to prepare. We do lots of frozen entrees.

But for some reason I can put up veggies and make sauces to can, and make preserves, and cobblers.... Wait does this mean that food is more important to me that decorating......:rolleyes1

Tonight I hope to make rolled flank steak wrapped in bacon. I just need to get the motivation. I guess that it's bacon is all I should need! :lmao:
 
Hey, all! Sorry I've been MIA this past week; I've been crazy busy. Today we had dinner at my mom's house. It was a birthday dinner (b-day is Wednesday). We had hamburgers, coleslaw, and baked beans.

Weight loss is still going awesome! I went shopping the other day and I am down THREE jean sizes!!! I'm not kidding, I literally cried on my mother's shoulder when the jeans fit. One of my goals, done!

Doug has his tournment playoff tonight, for 1st and 2nd. I am so excited, he is a bit nervous. There are 8 teams that get in and they were #8, just squeeked in and now they are going for the big prize. I so hope they win, but even so I am so proud of the guys.

WFDT ~ for me - a turkey wrap, cantalope, sliced cucumbers and tomatoes. My kind of meal. Doug will get prime rib at the Country Club.

Hey, all! I made black bean soup yesterday so we're having it again today. I'm still fighting that ear infection and ragweed is horrible here, so I really don't feel like cooking anyway.

I'm thinking of you all this morning and saying a prayer for your safety and happiness. :grouphug:
