The What's For Dinner Thread - August '09(recipe index in OP)

Nancy and Kathy- Don't worry, I kind of slipped it in. A family friend lost her battle to cancer in her spinal fluid, not only a loss to her family and friends, but to society. I think she was at peace with it and church was a very important part of her life, so I think that made it easier. She was in her early 70's, but still to young.

Vickie- I'm so glad you've been approved to fly, enjoy your new camera.

Hope Alexis is doing well.

Aimee here is the lastest cheese soup recipe

Beer cheese soup from Cuisine magazine

1 c onion minced
1/2 c celery minced
1/2 c carrot minced
5 Tblsp unsalted butter

5 TBlsp flour
1tsp paprika
1tsp dry mustard
1 c beer (such as lager) They recommend Heineken I used Sam Adams Boston
3 c chicken broth
1 tblsp worchestershire sauce
1tsp tabasco
1c whole milk
1 lb sharp cheddar grated
4 oz cream cheese cubed
salt to tast

Sweat the onion celery and carrot in butter in large pot over med low heat for 10 minutes.

Combine flour paprika and dry mustard in a bowl then stir into the veggie mixture. Increase heat to med cook 1-2 minutes stirring often.

Add beer and simmer until thickened. Add broth worchestershire and tabasco stirring constantly. Bring to boil, reduce heat to med simmer 5 minutes.

Whisk in milk and cheeses stirring constantly until smooth. DO NOT BOIL Or the soup will curdle

makes 6 cups

Nancy, you started a trend....cleaned & purged all day!!!!My dining room looks like a dumpster. I have a pile of bags for the Woman's Shelter, a pile to bring to the Legion (they are sending over summer clothes for when the girls go on leave), pile for the Vets that gets picked up in the morning & finally garbage that has to go out to the curb tomorrow night.

Tomorrow I'm going through my Grandma & Great Grandma's trunks so there will be plenty of dust & tears.

Dinner change...bison burgers & baked sweet potato fries. Easy & quick....bbl

I still have not figured out how cleaning and cleaning and still ther eis more to do:confused3 We are just two people!

Memories are the best tears. I wonder when those memories turn to nostalgic tears... I like those kind.
 


I went for a cut yesterday and my stylist said I was still ok by the 3 foot rule - if you can't see them from three feet away they don't exist. :laughing:
:laughing: I like that rule. I don't think it would apply to me. My hair is really dark, and I get a lot of gray in my part line. I don't think it would just look like highlights if I grew it out.

I always make the plan but I do not always follow through. This year I am trying to be more disciplined.

It sounds to me like you are succeeding! How did Buddy make out at the doctor?

I got the all clear to fly today. I think my " death stare " swung it for me !! :rotfl:

I would be cranky too! I'm glad she is looking better. That is a good sign.

We ate at a pizza place between the rink and dance. It was pretty good. Liam's favorite part of the meal was the salad. I checked under his bed for pods. ;)

This is the recipe I tried tonight - it was pretty bland tasting. We both had to use a lot of salt on it afterwards. I'd probably use 2 cans of green chilis and lots more salt next time. DH thought sour cream would be good on top, too.

Pumpkin Black Bean Bake
Ingredients
1 lb. ground beef (I used ground turkey)
2 cups 1/2-inch pieces peeled pumpkin or winter squash
1 medium onion, coarsely chopped
1 15-oz. can black beans, rinsed and drained
1 cup frozen whole kernel corn
1 4-oz. can diced green chiles
1/2 tsp. salt
1/2 cup lower-sodium beef broth (I used chicken)
1 3-oz. pkg. cream cheese, softened
1 8-1/2-oz. pkg. corn muffin mix
1 egg, lightly beaten
1/3 cup milk (I used soy)
1/3 cup canned pumpkin
Jalapeño-Olive Relish (optional)
Directions
1. Preheat oven to 400 degrees F. In large skillet cook ground beef, diced pumpkin or squash, and onion over medium heat until meat is browned and onion tender, breaking up ground beef with spoon; drain fat. Stir in black beans, corn, chiles, and salt. Heat through. Stir in broth and cream cheese until blended. Transfer mixture to 2-1/2-quart baking dish.

2. In medium bowl stir together corn muffin mix, egg, milk, and canned pumpkin until just combined. Spoon over beef mixture.

3. Bake 20 minutes or until toothpick inserted into topper comes out clean. Serve with Jalapeño-Olive Relish.

4. Jalapeño-Olive Relish: In small bowl combine 1/4 cup halved pitted green olives; 1 to 2 jalapeño peppers,* sliced; 6 cherry tomatoes, quartered; and 1 to 2 tablespoons snipped fresh cilantro. Makes 6 servings.

*Hot chile peppers contain oils that can burn skin and eyes. When working with them, wear plastic or rubber gloves.
 
Ok so I was watching Hell's kitchen on fox (i love that show) so I decided to make some food. I love tortillas (im obsessed cause there like all I can eat) so I found me a recipe and had at it. Well In hindsite I should have flatted them more but there still good thick so without furthing ado.....

2 cups flour
1/4 cup lard (crisco)
1/2 tablespoon salt
1 1/2 cup baking powder
1 cup warm water

Flour first, then lard, then baking powder, then salt. Water last. Mix. Looks like sticky paste. Break into 8 balls. Flatten with a rolling pin and make sure there thin (unless you like them thick). Thow um on cookie sheets (greasing them first does help) then put them in the oven on bake and 425 for around 10 minitues or so (you really gatta watch them till you know your exact times. MIne burned at 11 mins!:headache:)

The Dentist could not be sure I wont be hurtin through the flight but I kinda got the impression she just knew no matter what she said I was headin ower the water...I think my " death stare " swung it for me !! :rotfl:

Aimee I don't know about soy maybe someone else can chime in. I can't have soy. I have to avoid plant estrogens. Can you not have milk even when cooked? I can tolerate cooked milk just not a glass of milk. And for some reason chocolate milk (not that your going to use it in soup) I can have in small doses. The Dr said something in the chocolate breaks down the lactose. Who knew chocolate was so good :confused3

Since I am up so early I think we will have lasagna for tonight. I am cooking the noodles now.

We had big winds move through last night. I had a very difficult time sleeping.

I hope today brings some answers for Alexis. :hug:

Well the news was not great last night. I told you that Buddy has Atypical Retinosa Pigmentosa and it is atypical because the pigment is not spreading. It is the same as it was two years ago but the Dr said that he is losing his side vision. She told us that she has seen this happen but that she really does not know why the pigment is stable. The way Buddy's RP presents is pretty rare so they don't really know why the side vision is affected without the pigment spreading. Anyway, she said he now needs the massive dose of Vitamin A so I will have his prescription filled today. It is all that can be done to slow this down. He still meets the standard for his license, thank God! He told her that he has not noticed any issues when he drives but she wanted him to be aware. He was stunned.

He was surprised that I had made dinner because we were going to be out at dinnertime. It was a "thrown together" kind of meal and I did not think he liked it. Funny thing, he told me that the fried potatoes and the kielbasa and pepper toss reminded him of the suppers his Gramma made. I was glad that I had something that was nostalgic for him, he was kind of bummed when we got home.

Tonight I am making a cabbage soup for our meeting and Buddy will have leftover from last night.
 
Nancy - I'm so sorry the news wasn't as good as we'd hoped for Buddy. I will pray the Vit A slows it down. Sometimes those "thrown-together" type meals are the best, glad Buddy enjoyed it.:hug:

Dinner will be out tonight. I am sick of working my butt off only to have to cook dinner and have another mess. We signed a listing agreement and they are coming to take more pics tomorrow. If anyone is interested I will post the link so you all can see my little nest...It needs some more work but I will miss it...:sad1:

I don't think I ever updated on Tom. He is doing really well with lots of reading and meetings. They seem to love him there so that is really good. He is going to a party tomorrow for the founder of the company so he will get to meet alot more people. He is coming home for the weekend and working in their NJ office Mon and Tues. :cool1:

May baby is 7 months old today! :cake: I can't believe it! The little booger is still sleeping...am I spoiled or what?

Thanks for the recipe. I've never thought about trying to make my own tortillas. Hmmmm, I might just have to try it.

Good morning, everyone! It's looking to be a fairly nice day today. Alan is off elk hunting, but has promised to be back by noon so I can go to lunch with a friend. I hope he does, but if not, I'll just pack Timothy along!

Dinner tonight is still up in the air. Katie has a "Night of Excellence" at church that parents are invited to, so it will have to be something quick and easy. I'm thinking maybe a tuna pizza.

Tomorrow night is parent teacher conferences for Jacob and the twins. So, that will be another interesting dinner night. I'll have to give it some thought. I had Katie's conferences last week, and was pleasantly surprised to find her getting straight A's so far! We're hoping it lasts. Alan told her that if she can straight A's for one year, she'll get a cell phone. She's pretty motivated, let me tell you!

Lauren - I'd love to have a peek at your home! I know you've been doing tons of work on it, but I'd love to have a complete picture. Congrats to Tom for adjusting to the move so well! It will be nice to have him home for a few days, though, huh? I'm glad that T is sleeping well for you. Timothy is doing pretty well, although he still wakes up at least once a night and has to figure out how to get himself to sleep again. The last few nights have been better, as he's only cried for about half an hour instead of the hour and a half it has been.

Kat - how's the ankle? Any sign of improvement, yet?

I'm off to get breakfast started, but I'l BBL to check on Alexis!
