Yummy Gluten-free dessert?

My nephew has his high school graduation party next weekend and we were asked to bring a dessert.

Since he has Celiac's (and type 1 diabetes) I'd like to make something he's able to eat. :)

We do not eat gluten-free, so I'm looking for some tried and true yummy recipes.

Does anyone have a gluten-free dessert recipe they'd be willing to share?

what about rice krispy treats with Kraft marshmallows and a gluten free rice cereal?
 
My nephew has a wheat allergy, so my sister makes a yummy ice cream cake, with gluten free ice cream.

That sounds good...but it's a picnic at a park and we have to drive over an hour to get there, so not very practical. :)

That's an idea. Goodness, I didn't even know they made gluten-free rice cereal. :laughing: Guess I'll check out that section of the store next time I go shopping.
 
I have seen gluten free cake mix at the grocery store. Duncan Hines or something like that. Maybe use a sugar free frosting. Susan
 
...I know it's 'store-bought', but Kozy Shack's puddings are gluten-free....
 
Google "richard sax chocolate cloud cake". I've made this cake probably 40-50 times over the past 19 years. It's a very rich, moist, delicious chocolate cake that has no flour in it.

Since you're taking it to a picnic, instead of doing homemade whipped cream for topping, you can just get a can of whipped cream (check for gluten) and take that in a small cooler. It's also good with some raspberries on the side.:goodvibes
 
Ok, slight hijack--gluten free question-my niece is undergoing testing for Celiac's and she said that if they have to go on a gluten free diet that would mean things like if she ordered a hamburger and it had a bun but took off the bun she still couldn't eat the burger because it was "contaminated". Is that how it really works?

it depends on their sensitivity. For me if there is a bun on it I can't eat it so I always order a burger without the bun. if they seem confused I explain I can't have gluten otherwise I don't bring it up.

Some people can handle having a bun or something else with gluten touch it but it is really trial and error to see whether it makes them sick.
Either way it will cause intestinal damage whether they have a reaction or not.
 
I would ask his mom - all of the gluten free desserts mentioned above would not really be appropriate (generally speaking) for a Type 1 diabetic...now I know on occasion it would be ok but you might want to check to see if she has a suggestion that will be both gluten free and sugar free. My husband is celiacs but I can't think of a sugar free dessert right off the bat unless you do something with a sugar free pudding or jello.

His Mom (my BIL's ex wife) won't be at this party, but I can ask BIL. :)

My DH told me not to worry about it and just make whatever, but since it's his graduation party, I'd like to make something he can at least eat. :)
